Many years ago Pepperidge Farms made this layer cake which was sold in the freezer section of grocery stores. It had a pineapple frosting between the layers and toasted coconut on top of the cake. The only Pepperidge Farm coconut cake that I can find any mention of is their “Classic Coconut Cake”, which they still sell. I’ll post this for reader input. Mary Hi Mary, It always helps to know the name of the school and location, but I think that what you probably had is a frozen pizza product made by "Tony's" called "Fiestada". Some schools call it "taco pizza" or "Mexican pizza." It's not made at the school, it's bought frozen from a food service supplier. The Food Service Distributor Division of Schwan's sells it, but only by the case.
