Subject: Macaroni & Cheese recipe
Dear Uncle Phaedrus:
Almost 30 years ago I had a recipe for baked macaroni & cheese that used uncooked macaroni, but have since lost it.
I’ve tried to recreate it, but just can’t seem to get the proportions right. The ingredients I remember were:
milk, cream of mushroom soup, uncooked macaroni, salt, & shredded cheese. There wasn’t any flour or thickener
I can remember. You just mixed everything together & baked it, stirring halfway through. I don’t remember at
what temperature or how long it baked. The recipe may have been on the back of a Campbell’s Soup can, but I’ve
searched their website and couldn’t find it there. Hope you can help.

Hi Sandy,
There are a lot of recipes. Did yours have any sort of topping such as bread crumbs or crumbled French onion rings?
Any other ingredients like tomatoes, etc?

There may have been a topping, but I never used it. I’ve searched the net for quite awhile, but all the recipes
I’ve found call for cooking the macaroni before mixing everything together. I do remember adding chopped onion,
but don’t know if that was part of the original recipe or just something I added. I also added cubed ham or
sliced hot dogs occasionally, but know those weren’t part of the recipe. It was a “no fuss, no muss” recipe
that went together quickly because you just dumped everything in a greased pan (including dry macaroni) and
mixed it. It was really cheesy & tasty – the perfect comfort food. Thanks again for any help you can give me.

It took a lot of searching, but I finally found the below recipe on a message board. The source given was “an old cook book.”
This is the only one I could find with uncooked macaroni and the soup.

Easy Macaroni And Cheese
2 cups uncooked macaroni
2 cups milk
2 cups grated cheese (Cheddar/jack mix was used, but any hard cheeses may be used.)
1 can cream of mushroom soup
1/4 cup finely chopped onion
Salt, pepper to taste
Cook’s note:
Procedure:
1. Preheat oven to 350 degrees. Grease a 2-quart casserole dish.
2. Combine all ingredients and pour into prepared casserole dish.
Bake, uncovered, 1 hour, stirring once during baking.
Yield: 4-6 servings

I’m without an oven until the new one arrives on Friday morning, but we’ll be having this for dinner Friday night.

Hello Judy,
I think you mean chorizo rather than chorzio. There are dozens of recipes on the web and on Facebook
with those three ingredients plus some other major ingredient such as beans, cheese, fish, shellfish,
meat, eggs, etc.
The only one that I found with just those three as the main ingredients is Spanish rice.
