Fort Mason Officer's Club Sauce for Crab Cakes

  Years ago my husband( retired Coast Guard)  and I used to go to San Francisco ,buy groceries at the Presidio and then go for dinner at Fort Mason... 
The most glorious setting for dinner over looking the bay. My husband ordered crab cakes for an appetizer. I was not a seafood eater much and only took 
a taste. I thought it was good,He said it was delicious. Now I love crab cakes and have no idea what was in the sauce...only that it was white and good. 
any idea??

The restaurant was in the Fort Mason Officer's club. It was used a lot for weddings also. I don't believe it had a special name. It closed at least 12 years ago.

Hi Marcia,

Well, a bit of checking reveals that the place was referred to as “1 Fort Mason” or just “The Fort Mason Officers Club”. However, I found no mention of the crab cakes or the sauce or the chef. As you say, it was used a lot for weddings and special events. “Organic Chef Catering” often catered the weddings held there. With no more specific information, I have not a clue about the particular sauce used on the crab cakes there.

Sauce for crab cakes is usually rather individual to chefs and restaurants. Quite often, white sauces for crab cakes are a variation of a remoulade sauce. Some are as basic as a mixture to taste of Bell’s seasoning, mayonnaise, and lemon juice. There is a recipe below and two more on these sites:

Remoulade Sauce

3/4 cup Hellman's mayo (can use light if desired)
2 tablespoons fresh parsley, snipped fine
2 tablespoons Creole or coarse grained mustard
1 tablespoon lemon juice
1 garlic clove, pressed and chopped very finely
1 teaspoon paprika
1/4 teaspoon salt

Combine everything and chill.

Hello  Phaedrus,

I remember shopping with my mother at Kmart, and we would always stop by Kmart deli counter to buy sliced ham.

I remember a cherry gelatin glaze? on the top of the (Baked?) ham . 

Is there any way you could help me find this recipe?

Mama Leone's Shrimp Antipasto

Sauce for Shrimp Antipasto – Mama Leone’s

1 pound cooked shrimp peeled, cleaned and chilled

Sauce:
2 Tbls mayonnaise
2 Tbls. prepared Chili sauce
2 teas. tartar sauce
2 teas. sugar (or less if you prefer less sweet)

Mix sauce ingredients well. Pour over shrimp and toss to coat. Refrigerate and serve cold.
