Dear Sir,
Would you know the teriyake marinade at Cork N Cleaver, a chain.
Thank you very much.
Pam
Hi Pam,
"Cork 'n Cleaver" was a popular chain back in the 60's and 70's. There were still five of them in operation before the pandemic, the best known in Fort Wayne, IN. I don't know if they survived the pandemic.
I did find a recipe from their closed Colorado Springs, CO restaurant in an old copy of the "Ford Times Cookbook #6" from 1974 for "Teriyaki Sirloin" which includes a marinade recipe. Hopefully, that's it. See below.
Phaed
Cork 'n Cleaver
925 South 8th Street
Colorado Springs, CO
Teriyaki Sirloin
8 aged top sirloin steaks (12 oz each)
23 oz can pineapple juice
1 1/4 cups soy sauce
1 1/2 cups Burgundy wine
1 rounded tsp ground ginger
Mix ingredients (except steaks) with wire
whip and pour into deep pot or bowl. Place
steaks in marinade, fat side up. Marinate
to taste - 12 hours minimum, 24 hours maximum.
Remove meat, place in clean container and seal
from outside air until ready to be cooked.
Broil steaks to individual taste over charcoal
fire or under oven broiler. (Don't use marinade
a second time - it loses its distinctive flavor.)
