Hidden Sandwich
(really a salad)
1 slice rye bread
2 tomato slices
1 ounce turkey breast, sliced
1 cup shredded lettuce
1 ounce baked ham, sliced
1 ounce Swiss cheese, sliced
1/2 cup Russian Dressing (recipe follows )
2 strips crisp bacon
1 hard-cooked egg, sliced
Place the baked ham, Swiss cheese, and sliced turkey on the rye bread.
Mound the shredded lettuce on top.
Cover the sandwich with the Russian Dressing and top with egg slices
and tomato slices. Criss-cross the strips of bacon.
Garnish with sweet pickle and cucumber slices. Yields one sandwich

Lazarus Burger Sauce
2 cups Hellman's mayonnaise
2 1/2 tablespoons Hidden Valley Ranch powdered salad dressing mix
1 cup sour cream
Blend all ingredients until thoroughly mixed. Chill. Yield 3 cups.

Lazarus Gourmet Topping
8 ounces cream cheese, softened
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt
3 cups sour cream
4 strips bacon, crumbled and well drained
1 cup cheddar cheese, shredded
1/4 cup onion, finely diced
1/2 tablespoon fresh parsley, chopped
1 tablespoon cold water
Whip cream cheese until fluffy. Add sour cream and shredded cheddar cheese. Set aside.
In a blender, puree the diced onion in water. Add to the cheese mixture.
Fold in the Tabasco sauce, salt, bacon, and parsley. Refrigerate.
The Gourmet Topping makes a good sauce for potato skins.
Yields approximately 4 cups.

Lazarus Russian Dressing
1 quart Hellman's mayonnaise
1/8 teaspoon Worcestershire sauce
2 tablespoons onion, grated
1/8 teaspoon red wine vinegar
2 tablespoons green pepper, chopped
1 teaspoon salt
1 tablespoon sweet relish
1/2 cup chili sauce
Combine all ingredients and blend well. Refrigerate.
Yields approximately 5 cups.

Lazarus Quiche Lorraine
with variations
3 tablespoons all-purpose flour
12 slices bacon, cooked and crumbled
1 cup milk
1 bunch green onions, diced
3 extra-large eggs
4 ounces Swiss cheese, shredded
1 cup Hellman's mayonnaise
1 10-inch pie shell
Combine the flour, milk, eggs, and mayonnaise. Set aside.
Place the cooked and crumbled bacon, green onions and Swiss cheese in
the unbaked pie shell.
Pour the liquid quiche mixture over these ingredients.
Bake at 375 degrees for 35-40 minutes or until a knife inserted in the
center comes out clean.
Yields one 10-inch pie.
Variations:
Add any of the following vegetables to the traditional Lorraine mixture above:
3 ounces broccoli florets, steamed
3 ounces mushrooms, steamed
3 ounces asparagus, cut in 1/2 inch pieces and steamed
Replace the bacon in the above quiche recipe with 3 ounces of any of these meats:
diced chicken or turkey
julienne ham
flakes of tuna, well drained
chopped or shredded crabmeat
