Cinnamon Ice Cream

  Hello Phaedrus,

  I am looking for Cinnamon Ice Cream that is pink in color and not made out of the 
  ground cinnamon.  Sometimes it has the cinnamon candies in the ice cream but not 
  always.  I was told that it was extremely popular in Buffalo, NY and often served 
  with hot fudge sauce at gatherings in days long ago.  Some companies still make it 
  in the area like Quaker Bonnet, Perry's, or Charlaps.  I would love the recipe but 
  my searches have always led me to the ground cinnamon type of ice cream.

Hello Tom,

I can't find any connection between cinnamon ice cream and Buffalo, NY. I thought that perhaps this ice cream might be made with "red hots" cinnamon candy, but that led nowhere, only to sundae recipes made of vanilla ice cream with red hots candy sprinkled on top.

I did find one cinnamon ice cream recipe that's made with cinnamon oil instead of ground cinnamon. see below. The pink color you mention was probably just food coloring. Cinnamon isn't naturally that shade of pink or red.

  Cinnamon  Ice  Cream

   Ingredients : 
   2 tbsp. Calvados or apple jack
   6 drops cinnamon oil
   1/4 tsp. vanilla
   1 1/2 c. whipping cream
   1/2 c. sugar
   1/4 c. water
   5 egg yolks
   8 mint sprigs

   Preparation : 
      Combine Calvados, oil and vanilla in small cup.  In mixing bowl
   beat cream to soft peaks.  Refrigerate.  In saucepan heat sugar and
   water until sugar is dissolved.  Increase heat to boil to 239
   degrees, soft stage.  Meanwhile, beat yolks until thick and light,
   add hot syrup while beating at low speed.  Increase speed to high
   and heat until thick and cool.  Fold in Calvados mixture then fold
   in whipped cream.  Transfer to ice cream machine and follow
   manufacturer's instructions.

     10 1/2  ounces        corn chips
      1      cup           light corn syrup
      1      cup           sugar
      1      cup           creamy peanut butter
   
   Spread corn chips in a greased 15-inch x 10-inch x 1-inch baking dish.  In a
   saucepan over medium heat, bring corn syrup and sugar to a boil.  Remove from
   the heat; stir in peanut butter until smooth.  Pour over corn chips.  Cool.
   Break into pieces.  Yield:  about 3 dozen.

Orange Cranberry Bread

There are dozens of recipes like that. See below for a few. They're pretty much all the same.

  Orange-Cranberry  Bread

   Ingredients : 
   1 c. sugar
   2 1/2 c. all-purpose flour
   2 tsp. baking powder
   1/2 tsp. soda
   1/4 tsp. salt
   1/2 c. chopped pecans
   2 tsp. grated orange rind
   2 eggs
   3/4 c. orange juice
   1/2 c. mayonnaise
   1 1/2 c. chopped cranberries
   2 tbsp. flour
   1/2 tsp. grated orange rind

   Preparation : 
     Combine first 5 ingredients in large mixing bowl.  Stir in pecans
   and 2 teaspoons orange rind.  Set aside.  Combine the eggs, orange
   juice and mayonnaise in a small bowl.  Mix well.  Stir into dry
   ingredients until flour is just moistened.  Fold in cranberries. 
   Spoon into a greased and floured loaf pan.  Combine 2 tablespoons
   sugar and 1/2 teaspoon orange rind.  Sprinkle on top of loaf.  Bake
   at 350 degrees for 55 minutes.  Cover with foil and bake another 10
   minutes.  Cool on wire rack.

   Cranberry  Orange  Bread

   Ingredients : 
   2 c. unsifted flour

   (do not beat) and fold in cranberries and walnuts.  Bake in three
   small pans, 325 degrees, for 60 minutes.

   Fold in cranberries and walnuts.  Bake in loaf pan at 350 degrees 60
   minutes.  Remove form pan; cool on rack.

  Shepherd's  Beef  Pie

   Ingredients : 
   1 lb. ground beef
   1 1/2 c. beef broth, divided
   1 tsp. salt
   2 bay leaves
   2 whole cloves
   1/2 tsp. thyme leaves
   1 c. sliced carrots
   1 c. sliced mushrooms
   1 sm. box frozen peas (optional)
   1 c. diced celery
   1 c. diced onions
   1 tbsp. plus 1 tsp. flour
   1 lb. peeled, cooked potatoes, mashed
   1 tbsp. plus 1 tsp. margarine
   1/2 c. milk
   4 oz. grated Cheddar cheese
   1 tbsp. chopped chives

   Preparation : 
      Brown ground beef in a medium saucepan, drain oil, add 1 cup
   broth, salt, bay leaves, cloves and thyme.  Cover and simmer for 20
   minutes.  Add carrots, peas, mushrooms, celery and onions.  Simmer
   until vegetables are just tender.  In a small bowl, gradually add
   remaining broth to flour, stirring constantly to form a smooth
   paste, add to beef and vegetables.  Simmer 5 minutes longer.  In a
   small bowl, combine potatoes with margarine, stir in milk.  Mash. 
   Transfer the meat, vegetables, etc. to a baking dish.  Add mashed
   potatoes on top of meat and vegetables, covering mixture entirely. 
   Add grated cheese and chives on top of potatoes.  Bake at 375
   degrees for 10 minutes or until heated through, then broil 6 inches
   from source of heat 1 to 2 minutes or until potatoes are lightly
   browned.  Makes 4 servings.  This dish freezes well.

   Shepherd's  Pie

   Ingredients : 
   1 tbsp. oil
   1 med. onion, chopped fine
   2 lbs. lean ground beef
   6 med. potatoes, peeled and boiled
   1/2 c. milk
   2 tbsp. butter
   16 oz. can creamed corn
   Salt and pepper

   Preparation : 
      Saute onion in oil until translucent.  Add the beef to brown it. 
   Season to taste.  Drain excess fat.  Cook potatoes 15-20 minutes. 
   Mash together with milk and butter.  In a 13x9 inch pan, spread meat
   and onion for bottom layer.  Top with a layer of corn.  Frost with a
   layer of mashed potatoes.  Bake 350 degrees for 30 minutes or until
   heated through.  Place under broiler for 5 minutes to brown top.

   Shepherd's  Pie

   Ingredients : 
   2 lbs. ground chuck
   3 (10 oz.) cans tomato soup
   2 cans cut green beans, drained
   5 c. instant mashed potatoes or
      leftover mashed potatoes
   Paprika

   Preparation : 
      Brown ground chuck, drain.  Season with salt and pepper.  Add
   tomato soup, green beans to meat; place in 2-quart casserole dish. 
   Top with instant mashed potatoes.  Sprinkle with paprika.  Bake at
   350 degrees for 30 minutes or until potatoes are slightly browned.

   Shepherd's  Pie

   Ingredients : 
   1 lb. lean ground beef, browned and drained
   1/4 c. diced onion
   1 pkg. frozen vegetables, cooked as
      directed (add salt and pepper to taste)
   2 c. hot mashed potatoes
   1 c. shredded cheese

   Preparation : 
      Add onion to ground beef and cook until tender.  Add veggies. 
   Pour in a well greased casserole dish. Top with potatoes, sprinkle
   with cheese.  Bake in 400 degree oven for 15 minutes.

   Shepherd's  Pie

   Ingredients : 
   1 lb. ground beef
   1 med. onion
   10 oz. frozen peas & carrots
   10 3/4 oz.) tomato soup
   1 tsp. Worcestershire sauce
   1/2 tsp. salt
   1/4 tsp. basil
   1/8 tsp. pepper
   3 c. hot mashed potatoes
   1 c. grated cheddar cheese

   Preparation : 
      Crumble meat into 2 quart casserole.  Add onion.  Microwave on
   high 5 minutes. Drain.  Microwave vegetables in package at high 3
   minutes.  Stir soup, Worcestershire sauce, salt, basil and pepper
   into meat mixture while microwaving vegetables.  Spread evenly in
   casserole.  Top with vegetables.  Spoon mashed potatoes on top. 
   Microwave 6 minutes.  Top with cheese; microwave 2 minutes. Let
   stand 3 minutes before serving.

Vinegar Candy

Hi Janice,

I could not find a recipe for vinegar lollipops, but there are several recipes for vinegar candy. If a stick were inserted in this candy before it hardened, it could be made into lollipops.

   2 tbsp. butter

   Preparation : 
     Mix all ingredients in saucepan.  Stir over heat until sugar is
   dissolved and occasionally afterwards.  Boil until brittle when
   dropped in cold water.  Pour onto buttered platter to cool.  Mark
   into squares while still warm.

   Ingredients : 
   1 c. brown sugar, packed
   1 tbsp. butter
   1/4 c. vinegar

   Preparation : 
      Cook over low fire, stirring occasionally to prevent scorching. 
   When it spins a brittle thread.  Pour onto a greased cookie sheet. 
   Let stand until hard.  Break into pieces.
