Subject: recipe request
Dear Phaedrus,
I have been searching and searching for some time for a pickling recipe that duplicates
the Clausen Hearty Garlic Dills. I have not had any luck what so ever. Hoping you can help.
Thanking you in advance for your efforts.
Joan
Hello Joan,
I had no success locating a copycat recipe for Clausen Hearty Garlic Dills. However, at
least one person who tried the below recipe said it was close and that it was very good.
Phaed
Hearty Garlic Dills
Ingredients:
2 quarts cucumbers
1/3 cup instant minced onion
6 garlic cloves, minced
1/2 tablespoon mustard seeds
1/4 cup dill weed
3 cups water
1 cup white wine vinegar
1/4 cup canning salt
a few chili peppers thrown in for good measure
Preparation:
Slice up your cucumbers into long wedges and fill prepared jars (sterilized jars and lids).
Add a bunch of dill to each jar.
Heat vinegar and water with remaining ingredients just long enough to dissolve salt.
Cool this mixture to room temp and then pour into jars up to the rim.
Cover and refrigerate at least 3 days.

Hello Bonnie,
There are lots of these. See below for a few.
Phaed
Macaroni And Cheese Casserole
8 oz. macaroni
1/3 stick butter
12 oz. sharp cheddar cheese grated
4 eggs
2 1/2 c. milk
3/4 tsp. salt
Grease a 2 quart casserole dish. Cook macaroni according to directions on package.
Drain. Pour macaroni back into pot and add butter. After butter melts, alternate
layering macaroni and grated cheese (saving some for top) in the greased dish.
Beat eggs, milk and salt. Pour mixture over macaroni and cheese. Bake at 350 degrees
for 45 minutes.
------------------------------------
Macaroni & Cheese

3 eggs
Cook macaroni as directed on package. Beat eggs and add to milk and salt. Place layer
of well drained macaroni in casserole dish. Then layer of grated cheese. Repeat layers

1 c. soft bread crumbs
2 tbsp. butter
2 tsp. onion, minced
2 tsp. parsley, minced
6 eggs, beaten
2 tsp. salt
2 c. American cheese, grated

except the bread crumbs. Put macaroni in buttered 2-quart casserole; pour mixed ingredients

Subject: Need recipe
Dear Phaedrus,
Thank you so much for your quick response to my other request for a recipe
duplicating the Clausen Hearty Garlic Dill pickles. I will be trying that
recipe when my cukes in the garden start to come in.
I do have another request for another Clausen pickle. This one is for a recipe
like the Clausen Kosher Dill pickles. Even one that is close to it if not the same.
Thank you for your time and your good work.
Sincerely,
Joan
Hello Joan,
I found a couple of copycats for these. See below.
Phaed
Claussen Kosher Pickle (Copycat)
This recipe can be adjusted to suit your needs. Keeps in refrigerator for one year.
30 cucumbers (sliced into quarters lengthwise)- I put most of the cukes in whole so don't get as soft.
1/3 cup instant minced onion (I mince mine fresh)
6 garlic cloves, minced
1/2 tablespoon mustard seeds
6 heads fresh dill (I use the entire stalk-stem)
1 1/2 qts water
2 cups cider vinegar (I use white distilled vinegar)
1/2 cup canning salt (I use kosher salt-I can never find canning)
Place cukes in jars
Boil liquids and seasonings (except dill, put that into jars) until the salt dissolves, then cool.
Pour over cukes. Close jars.
I use mason jars and seal them with my Food Saver cannister attatchment, but I also have just
hand tightened the jars.
LET SIT ON COUNTER FOR 3 DAYS turning them occasionally, then refrigerate.
----------------------------------------
Claussen Kosher Dill Pickles Clone
1 1/2 quarts boiled water, cooled
2 dill flowers
2 garlic cloves, peeled and halved
1 1/4 pounds (8 to 10) pickling cucumbers
6 long sprigs fresh dill
1 tablespoon coarse kosher salt
1/2 cup white vinegar
Put dill flower and garlic in bottom of a Mason jar. Add the cucumbers. Put
sprigs of dill in center of cucumbers. Add salt and vinegar, then fill jar
with boiled water that is now cool to within 1/8th of top. Put on seal and
ring. Shake to dissolve salt. Set upside down on counter away from sunlight
and heat. Let sit 4 to 5 days turning the jar either upright or upside down
each day.
Let sit upright 2 more days, then refrigerate. Lasts about 6 months.
This is from the actual Morrison's recipe book. Note that this is for a food service quantity,
and that the measurements are mostly weight measures, in pounds and ounces.
