Subject: Morrison's Cafeteria Mushrooms
My husband loves mushrooms and on occasion will talk about the mushrooms
he would get at Morrison's Cafeteria. I know there was a Morrison's in
Anderson, SC he would get them at. He also talked about Morrison's in two
locations in Georgia when he lived in Morrow and his grandmother lived in
Noonan. He said the mushrooms were small whole ones in a brown gravy/sauce
put in bowls as a side. Hopefully you will have some luck in finding
something similar.

This is the recipe that’s in the last version of Morrison’s Kitchen Manual.

Morrison’s Mushrooms
Yield: 45 – 3 oz. servings
1/2 lb Oleo (Today we would use butter)
1 lb diced onions
1 lb diced bell pepper
Melt Oleo (butter) in sauce pan and add onions and bell peppers and saute until tender. Do not brown.
1/2 gallon beef base stock. If beef stock is not available you can use 1/3/4 oz. beef base to 1/2 gallon of water.
1 lb. fresh tomatoes, diced
1/2 tsp. pepper
2 oz. sherry
Add these ingredients to above and heat to simmer.
Dissolve 4 oz. corn starch in 4 oz. water and stir in.
5 lbs. fresh mushrooms, whole (Use button mushrooms if available)
Wash, drain and dry and add to above. Remove from heat. Ready to serve in five minutes.

Hi Uncle Phaedrus,
I am your reader who had asked about a recipe for the Hilltop Steak
House salad dressing. I saw on your post that Lauren is looking for the
recipe for the Hilltop Steak House dinner rolls. Shortly after the
restaurant closed my dentist and I were lamenting over the closure. He
mentioned he did find out that a wholesale / outlet retail bakery -
Piantedosi in nearby Malden, MA supplied the dinner rolls to the Hilltop
restaurant. I just called Piantedosi, and they confirmed that indeed
they did provide these rolls.
I was told the rolls that were the Hilltop dinner rolls are #301 and
they are available in a frozen form (one can cook them up fresh) in the
freezer case at Piantedosi's Malden, MA outlet store.
Hmmm . . . think I'll take a ride over . . .

Subject: Pineapple Bran muffins 7-2-2015
Hello....My name is Pamela and I live in Dayton,Ohio. I have looked in so
many places for this muffin recipe...It used to be sold in the bakery in
Rike's Dept store...its not your normal pineapple bran muffin... they were
sold unmolded out of large muffin pan and were in the bakery case on a tray
upside down. They were super moist and almost sticky when you touched the
outside of the muffin. They also had bigger size pieces of pineapple inside
the muffin. I have combed the internet and your site for this recipe. I even
wrote to the Dayton Daily News food dept thinking since they had lots of the
Rikes old documents when they went to Macy's brand.
I hope you have more luck than I have and it would be a true miracle if you
found it. I love your website and gave so many ppl that I know your link so
they also can enjoy looking thru so many old and unique recipes.

Sorry, I had no success with this. I see that you have had requests for this on other message boards for several years with no success. It just doesn’t appear to be available.
I’ll post this so that readers can give their input, but unless we hear from a former Rike’s Department Store Bakery employee, I see little hope.
