Ralph & Kacoo's Hush Puppies
2 1/2 c. cornmeal
1 1/2 c. flour
1 tbsp. sugar
1 tsp. baking soda
1/8 tsp. red pepper
2 tsp. baking powder
1/8 tsp. garlic powder
1 tbsp. chopped green onions
1 c. evaporated milk
3/4 c. water
1 egg, beaten
1 tsp. chopped parsley
Oil for deep frying
Mix all dry ingredients in a large bowl. Add onion, milk, water, eggs and parsley and blend well.
Refrigerate until ready to use. Heat oil. Spoon batter into oil, frying until golden brown.
Makes 30-40 hush puppies.
Magic Pan Banana Crepes Chantilly
You take a fresh crepe, and spread it with apricot jam. Then you slice one
banana (just ripe, not mushy), carefully toss the slices with a little brown
sugar and sweet vermouth, and let them steep for a couple of minutes. You lay the
steeped banana slices in a line across the middle of the crepe, blanket the
line in whipped cream, and then flap the crepe edges one over the other around
the puffy line of bananas and whipped cream. Finally, you dust the outside of
the rolled crepe with powdered sugar, top it with another dollop of whipped
cream, top the dollop of cream with toasted slivered almonds and maybe a banana
slice and a mint sprig.

Wafer Cookies
Blend together, and then chill:
1 cup butter, softened
2 cups flour
1/2 cup heavy cream
Roll out dough 1/8" thick. Cut into rounds, and coat both sides in sugar. Place rounds on
cookie sheet and prick with a fork. Bake at 350 degress until set but not browned. Cool.
Filling:
Blend together:
1/4 cup butter, softened
1 cup powder sugar
1 egg yolk
1 tsp. vanilla
If desired, divide frosting and add food coloring. Spread filling on one round, and put together
with a second.

Zucchini Compote.
Description:
Zucchini Compote is healthy and tasty, contains a lot
vitamins. We call it "Pineapple" compote.
Ingredients:
1 ea fresh Zucchini
4 pint Water
1 lb 4 oz - 1 lb 6 oz Sugar
3 - 4 cloves
1/2 tsp vinegar (80 %) or lemon juice (from 1 ea - lemon)
Method:
1. Cube zucchini. Put into saucepan, pour water.
2. Bring mixture to a boil. Add sugar then mix until sugar dissolves.
3. Cook, and when cubed zucchini became yellow, even transparent, add cloves. Take away from the heat.
4. Add vinegar or flavour with lemon juice.
5. Distribute into jars. Close with lid very tightly. Jars to sterilize!

Milk (or cream if calories aren't important!)
Chocolate syrup
