Subject: Looking for a stuffed zucchini recipe
I am looking for a stuffed zucchini recipe like the appetizer that Red Robin
used to serve. I know that it had bread crumbs and parmesan cheese in it and
they served it with ranch dressing. I tried asking Red Robin for it, but was
only told that they had discontinued it. It was to die for. Can you help me out?
I have so much zucchini in my garden!
Hi Linda,
Sorry, I had no success at all locating a copycat recipe for Red Robin's stuffed zucchini.
There are other recipes for stuffed zucchini with bread crumbs and parmesan cheese. See:

California Mushroom Salad. I used to LOVE this salad, Could you please send it to me?
Thank-you Karen
Hello Karen,
I cannot locate a recipe for California Mushroom Salad. Bill Knapp's used to serve one.
Is that what you mean? You didn't say so. The only other salad with that name that I
found mentioned is this, from a catering menu:
California Mushroom Salad with Balsamic Vinaigrette
"A mixture of mushrooms are marinated in a balsamic vinaigrette with minced garlic and herbs. "
I found no recipes at all.

Yes Bill Knapps did serve that salad.. It was marinated button mushrooms
with lots of cheddar cheese and I think greens. It was quite a large salad
and delicious!

Having grown up in California, I have had many versions of a California Salad.
Here are two versions from my recipe files.
Timm in Oregon.
California Mushroom Salad
Ingredients:
2 heads romaine lettuce, cut into 1 inch strips
2 tomatoes, peeled and cut into wedges
1 ripe Hass avocado, peeled and diced
1/2 cup Bermuda onions, diced or minced
8 ounces white or cremini mushrooms, sliced
1/2 cup Parmesan cheese, fresh grated
For the Dressing:
7 tablespoons olive oil
1/2 teaspoon kosher salt
1 clove garlic
3 tablespoons red wine vinegar
2 tablespoons lemon juice, freshly squeezed
1 teaspoon black pepper, freshly ground
2 dashes Worcestershire sauce
1 coddled egg, boiled for 1-1/2 minutes
For Garnish:
4 ounces bacon, chopped, cooked crisp and hot
Instructions:
Prepare large wooden salad bowl with 1 tablespoon of olive oil; add the salt
and rub with garlic. Remove the remaining garlic. Add the romaine lettuce,
tomatoes, avocado, onions and mushrooms, and sprinkle with cheese. Mix the
remaining olive oil, vinegar, lemon juice, and seasonings thoroughly. Add the
egg and whip vigorously. Garnish with the bacon.

California Avocado Mushroom Salad
Ingredients:
1/3 cup olive oil
1 tablespoon wine vinegar
1 tablespoon parsley, chopped
1 clove garlic, halved
1 teaspoon kosher salt
Black pepper, freshly ground to taste
Juice of 1 lemon
2 ripe Hass avocados
1/2 pound mushrooms, thinly sliced
Crisp lettuce leaves
Parsley sprigs for garnish
Instructions:
Combine the oil, vinegar, parsley, garlic, salt, pepper and lemon juice; chill well.
Halve the avocados lengthwise, twisting gently to separate halves. Whack a sharp
knife directly into seeds and twist to lift out and then peel. Place the avocados,
cavity side down, on cutting surface, and slice very thin. Layer sliced avocados
and mushrooms on a rimmed platter.
Marinate in the chilled dressing for 1 hour before serving. Drain and serve on lettuce
leaves, garnished with parsley.

Would like the recipe, or as close as possible for the above dish.
Thanks, Karl
Hello Karl,
Sorry, I had no success locating a copycat for this recipe. Here is the description:
"Mozzarella Marinara - Whole milk mozzarella cheese breaded and fried, topped with
provolone cheese and marinara sauce."
There is a "close" recipe for Maggiano's marinara sauce here:

Subject: Whole Foods Tapioca Recipe Request
Hello!
I am searching for the recipe to make a particular type of tapioca pudding that is
sold in the bakery area of Whole Foods in Austin (it is the flagship store on N. Lamar).
It is very different from typical tapioca pudding, the tapioca balls retain their
shape and are not very mushy and the pudding is very thick and shape-able and rich.
Any help would be appreciated as my husband loves it and we are not able to make it
to Austin very frequently.
Thank You,
Amy
Hi Amy,
Sorry, I cannot locate a recipe or a copycat for the Whole Foods pudding. Whole Foods is
the sort of place where they might help you with a recipe if you ask at the bakery counter.
