Hello
I hope you can help a few years ago I had a recipe for a chocolate almond inside
out cake it was 4 layers and you placed all layers together then you cut out a big
circle going into the 4 layers like a funnel shape then you inverted the cake so
pushed the circle you removed back into the cake and it gave the cake a interesting
lines when you cut and served it .
But I lost the book and it was from the California Culinary School I have looked
every where for this recipe.
Thank you in advance.
Verna
Hi Verna,
Well, I could not find a "chocolate almond inside out cake" anywhere, nor could
I find any sort of inside-out cake connected with a California Culinary School.
However, I did find that there is a "California Culinary Academy", and that
they have a cookbook and in that cookbook is a "chocolate mocha inside/out cake" .
I also found a recipe with that name that seems to fit your description.
See:
"Cooking at the Academy: California Culinary Academy"

Subject: Recipe Request
I am searching for a recipe for a soft sugar cookie similar to the ones sold in
grocery stores in the Mid-Atlantic region of the country. They are very light,
not browned at all and always have thick frosting on them. My grandchildren
love them, but the see to be quite expensive. They are usually found in the
bakery section at larger chain grocery. (WalMart, Martins, ECT. If you have
it or can find it I would be most appreciative.
Sincerely
Heather
WV
Hello Heather,
Well, I don't have such a recipe, and there is no way to find a recipe such as
that because there is no unique name or unique ingredient to search by, and there
are hundreds of sugar cookies recipes and thousands of Internet pages with the words
"sugar cookies" & "recipe" on them.
I did find the below recipe. Try it.
Phaed
Bakery Sugar Cookies
1 cup butter or butter Crisco
2 t. baking soda
1 egg
1 t. vanilla
1 cup sugar
3 cups flour
a few tablespoons of milk as necessary
Cream together butter and sugar with electric mixer.
Add egg, vanilla and baking soda. Add flour one cup at a time.
Add milk one tablespoon at a time until dough is of rolling consistency.
Roll out and cut into shapes (roll thick).
Bake for 6-7 minutes on ungreased cookie sheet on top shelf of oven at 400 degrees.
(Cookies will look undone on top). Cool and frost.
Frosting:
4 T. softened butter
2 c. powdered sugar
a few T. milk to make frosting spreading consistency
Beat butter in a mixing bowl and add powdered sugar gradually.
Add milk and beat until frosting is a good spreading consistency.
After frosting cookies, sprinkle immediately with colored sugar.

I believe Heather may be looking for Berger Cookies. They are very big in Maryland. A recipe is here:
King Arthur Flour
They are light cakey cookies with a thick fudge frosting.
Thanks for your great work. I love reading your archives!
