Subject: Hoe Kow, Chicago Loop District, Sweet sauce recipe
Hi;
When I was a boy and visited Chicago with my uncle when he visited his cousin Doris we would usually
go eat at Hoe Kow once or twice. His cousin Doris was a resident of Chicago many decades and was a
good friend of the Moy family, Richard and Ruth I believe, and their son Richard Jr. I think.
The restaurant closed 20 to 30 years or so ago I think after their son took over the restaurant
eventually but it was quite a job to balance his other full time job. I really have fond memories of
that place and their menu. Especially, I loved their pork centers and egg rolls that we would dip in
their homemade Sweet Sauce. I have not been able to find a sweet sauce or duck sauce that tastes the
same and I would love to make my own because it seems none of the commercially available sauces compares
to theirs. It was sweet but also tangy and not sure what all the fruits, vegetables and spices were in it.
We used to bring gallon jugs back with us to Kansas because it was good on other things besides Chinese
food as well.
Hope to hear back from someone.
Thanks,
Mike
Hello Mike,
I had no success finding this. I found a lot of mentions of Hoe Kow, but no recipes. I searched for
their egg roll recipe in 2014 with similar lack of success.
I found a few generic sweet sauce, plum sauce, and duck sauce recipes, but none with any mention of
Hoe Kow or even of Chicago. I’ll post this for reader input. Perhaps one of my readers knows of a
recipe or can recommend a “tastes-like.”

Subject: Hummus
Uncle Phaedrus,
For decades Jimmy Tayoun owned a restaurant in Philadelphia called The
Middle East. They had the best hummus I've ever eaten. I've eaten hummus
all over the world. His had a unique flavor. I've tried for 25 years to
duplicate it and cannot. Can you find out that recipe? It haunts me!
Bob
Hello Bob,
Sorry, I had no success finding this recipe. I found scans of the "Middle
East Restaurant" menu that describe it like this: "homus tahini: chick peas
and crushed sesame." Middle East Menu
I will post this on my site for reader input. Perhaps someone knows what
made the hummus at Middle Eastern different.

Hi Deborah,
Sorry, no success. I’ve already got requests posted on my site for a couple of Marsh Bakery recipes,
and I’ve never gotten a response of any kind from a reader.
I’ll post this for reader input.
