Hi Elizabeth,

I could not find any carrot cake recipes for a cake that serves just four. Below are some basic carrot cake recipes.

Carrot  Cake

 Ingredients :
 Cake
 2 c. sugar
 4 eggs
 2 tsp. baking powder
 1 c. pecans, cut sm.
 4 c. grated carrots
 1 c. vegetable oil
 2 c. flour
 2 tsp. baking soda
 2 tsp. cinnamon
 Icing:
 8 oz. cream cheese, softened
 1/2 stick margarine, softened
 1 box powdered sugar (1 lb.)
 2 tsp. vanilla extract

 Preparation :
   CAKE:  Stir all dry ingredients (except pecans and carrots)
 together and then add eggs and oil.  Mix until just blended and then
 add carrots and pecans.  Bake at 375 to 400 degrees for 35 to 40
 minutes or until done.  ICING:  Mix cream cheese and margarine until
 smooth, add sugar and vanilla and blend.  Ice when cake is cool.

 Carrot  Cake

 Ingredients :
 2 c. flour
 2 tsp. cinnamon
 2 tsp. soda
 4 eggs, unbeaten
 3 c. carrots, shredded
 2 c. sugar
 2 tsp. baking powder
 1 tsp. salt
 1 1/2 c. vegetable oil
 1 c. walnuts
 Frosting:
 1 (3 oz.) pkg. cream cheese
 1 tsp. vanilla
 1 tbsp. milk
 1 stick butter
 2 c. powdered sugar

 Preparation :
   Sift dry ingredients together.  Add eggs and oil and mix in mixer.
  Stir in carrots and nuts.  Pour into 9 x 13 inch greased and
 floured pan.  Bake at 350 degrees for 45 minutes.  Mix together and
 spread on cake.

 Carrot  Cake

 Ingredients :
 1 1/4 c. Crisco oil
 4 egg yolks
 2 1/4 tsp. cinnamon
 3/4 tsp. salt
 1 1/2 c. grated carrots
 2 c. sugar
 2 1/4 c. plain flour
 2 1/4 tsp. nutmeg
 1 1/2 tsp. soda
 1 c. pecans, chopped
ICING:
 6 oz. cream cheese
 1 box confection sugar
 2 tbsp. milk

 Preparation :
   Cream oil, sugar and egg yolks.  Add sifted dry ingredients
 gradually while beating.  Mix in carrots and nuts.  Beat 4 egg
 whites until stiff and fold in carefully.  Bake in greased and
 floured tube pan at 325 degrees for 1 1/2 hours.  Cool for 10
 minutes, remove from pan.  Cream all ingredients and spread on cake
 while still warm.

 Carrot  Cake  With  Pineapple

 Ingredients :
 1 1/2 c. Wesson oil
 2 c. sugar
 2 eggs
 2 c. carrots, grated
 1 c. crushed pineapple, drained
 1 c. nuts (optional)
 1 tsp. soda
 1/2 tsp. salt
 1 tsp. cinnamon
 1 tsp. vanilla

 Preparation :
   Cream oil, sugar and eggs together.  Add pineapple and grated
 carrots and lastly the dry ingredients.  Bake for 1 hour at 350
 degrees.  Bake in a tube pan.
 

Chardonnay Blood Orange Wine Vinegar

Old  Fashioned  Macaroni  And  Cheese

 Ingredients : 
 3 to 5 oz. elbow macaroni (about 1 c.)
 1 tbsp. grated onion
 1/2 tsp. salt
 1/4 tsp. pepper
 1 1/2 c. shredded cheese
 1 c. thin white sauce
 1/2 tbsp. butter or margarine
Thin White Sauce:
 1 tsp. butter or margarine
 1/2 to 1 tbsp. flour
 1/4 tsp. salt
 1/4 tsp. pepper
 1 c. milk

 Preparation : 
    Heat oven to 375 degrees.  Cook macaroni as directed.  Place
 macaroni in ungreased 1 quart casserole.  Blend cheese, onion, salt
 and pepper into white sauce.  Pour mixture over macaroni and mix
 well.  Dot with butter.  Cover; bake 30 minutes.  Uncover; bake 15
 minutes longer.  3 to 6 servings.

 Stovetop  Macaroni  And  Cheese

 Ingredients : 
 2 c. uncooked macaroni
 1 (12 oz.) container cottage cheese
 1 (5 oz.) can evaporated  milk
 1/2 c. Cheddar cheese, shredded
 1/2 tsp. salt
 Freshly ground black pepper

 Preparation : 
    Cook and drain macaroni according to package directions.  In
 blender process cottage cheese and milk until smooth.  Place in
 small saucepan and, stirring constantly, heat over medium-low until
 smooth.  Add Cheddar cheese, salt and pepper.  Stir until cheese
 melts.  Fold in macaroni.  Serve immediately or place in covered
 casserole dish and bake 20 minutes at 350 degrees.  Makes 8 1/2 cup
 servings.

 Macaroni  And  Cheese  (Crockpot)

 Ingredients : 
 2 c. macaroni
 1 1/2 c. milk
 1 c. Velveeta cheese
 1/2 c. butter
 1 tsp. salt
 2 tbsp. butter
 2 tbsp. flour
 1/4 tsp. pepper

 Preparation : 
    Cook macaroni and drain.  Melt 1/2 cup butter.  Add 2 tablespoons
 flour and stir to a paste.  Slowly add 1 1/2 cups of milk.  Cook
 until thick.  Add salt and pepper.  Stir in the Velveeta cheese. 
 Dot top with 2 tablespoons butter.  Slow cook 30 minutes or until
 done.  30 minutes on high, longer on low.

 Crockpot  Macaroni  And  Cheese

 Ingredients : 
 8 oz. macaroni, cook and drain
 1 lg. can evaporated milk
 1 1/2 c. sweet milk
 1 tsp. salt
 1/4 c. melted margarine
 12 oz. sharp cheddar cheese, shredded
    (save about 1/2 c. for the top)
 1 egg

 Preparation : 
    Butter crockpot.  Mix all ingredients together.  Pour into pot
 and top with 1/2 cup cheese.  Sprinkle with paprika.  Cook for 3 1/4
 hours on low.

Hi Karen,

I found the perfection salad, but no fruit of the forest pie recipes. Lots of apple-rhubarb pie recipes, but not that one.

Perfection  Salad

 Ingredients :
 2 (3 oz.) boxes lemon or lime Jello
 1 can pineapple, crushed
 1 stalk celery
 1 lg. carrot
 1 c. cabbage, shredded
 3 c. water (hot)

 Preparation :
    Dissolve Jello in hot water.  Mix pineapple, celery, carrots, and
 cabbage. Chill until set; serve with salad dressing on side.

  Perfection  Salad

 Ingredients :

 1/4 tsp. salt
 1/4 tsp. dry mustard
 1/4 c. vinegar
 1/2 c. mayonnaise
 1/2 c. shredded cabbage
 1/2 c. grated carrots
 1/2 c. chopped celery
 1 tsp. grated onion

 Preparation :
    Dissolve Jello in boiling water and add salt, mustard, vinegar,
 and mayonnaise. Beat until well blended.  Cool until syrupy and add
 remaining ingredients.  Pour into mold.  Serves 6-8.

 Perfection  Salad

 Ingredients :
 1 sm. pkg. lime Jello
 1 c. chopped celery, finely chopped
 1 c. finely chopped cabbage
 1 sm. jar chopped pimientos

 Preparation :
   Dissolve lime Jello in 2 cups hot water and set in refrigerator
 until partially set.  When firm enough, fold in other ingredients
 and return to refrigerator until firm before serving.  Use 8 x 8
 inch Pyrex dish.

  Great  Grandma's  Salt  Rising  Bread

   Ingredients : 
   3 med. potatoes
   3 tbsp. cornmeal
   1 tsp. sugar
   4 b. boiling water
   Flour
   2 c. lukewarm milk
   1 c. water
   1/8 tsp. soda
   2 tsp. salt
   2 tbsp. melted shortening

   Preparation : 
     Peel and slice potatoes, add cornmeal, sugar, salt and boiling
   water.  Wrap the mixture in a heavy cloth.  Cover and allow to stand
   in a warm place overnight.  Remove potatoes, add milk, water, soda,
   salt and shortening.  Add enough flour to make a dough stiff enough
   to knead until smooth and elastic.  Then form into loaves.  Place in
   well greased pans, cover and let rise until double in bulk.  Bake in
   a 400 degree oven about 20 to 25 minutes.  This makes three loaves.

   Mama's  Salt  Rising  Bread

   Ingredients : 
   1 c. oil
   1 c. sugar
   1 tbsp. salt

   Preparation : 
     Slice 2 medium potatoes, add 2 tablespoons meal, 1 teaspoon salt,
   1 teaspoon sugar, pinch soda, 1 pint boiling water, place in glass
   jar or large plastic covered container overnight.  If not covered
   with foam next day, put container in warm water until it does foam. 
   Remove potatoes, discard, add enough flour to make a stiff batter
   when stirred with spoon, let stand until light and puffy.  In a pan
   of very warm water - add:  One pint warm water, add flour and knead
   until dough will not stick to board.  Make into loaves and (or)
   rolls.  Put into well greased pans, let rise well.  Bake at 325
   degrees for 1 hour.

   Maw  Maw's  Salt  Rising  Bread        

   Ingredients : 
   3 med. sized potatoes, pare & slice
   3 tbsp. cornmeal
   1 tsp. sugar
   1 tsp. salt
   4 c. boiling water

   Preparation : 
      Add cornmeal to potatoes.  Mix all ingredients.  Wrap bowl in a
   heavy cloth. Cover and allow to stand in a warm place over pilot
   light on top of stove.  In morning remove potatoes.  Add: 1 c. water
   1/8 tsp. soda 1/8 tsp. salt 2 tbsp. melted shortening   Add
   sufficient flour to make a dough just stiff enough to knead.  Knead
   until smooth and elastic.  This may take somewhat longer than usual.
    Form into loaves.  Place in well oiled pans.  Cover and let rise
   until double in bulk. Bake in moderate oven, 400 degrees, about 45
   minutes.  Makes 3 loaves.

   Old  Fashioned  Salt  Rising  Bread
   
      Pour 1/2 cup boiling water over 1 tablespoon corn meal.  Ten
   minutes later, stir in 1 tablespoon flour.  Cover and set in warm
   place overnight.  Early in the morning, add 1/2 cup warm milk and
   enough flour to make a smooth thin batter.  Set in a pan of water
   warm enough to bear the hand in, to rise.  Do not allow it to cool. 
   When this has become very light, add it to a batter made of 1 quart
   of milk (scalded and cooled to lukewarm) and enough flour to make a
   rather stiff batter.  Beat well and set again in warm place to rise
   for about 1/2 hour.  Now work in 3 or 4 tablespoons shortening, 1
   tablespoon salt, and enough flour to make a soft dough.  Shape into
   small loaves and bake as usual in 325-350 degree oven.

   Salt  Rising  Bread

   Ingredients : 
   2 Irish potatoes
   3 tbsp. white sugar
   1 pinch baking soda
   2 c. boiling water
   3 tbsp. corn meal1 pt. sweet milk
   4 tbsp. lard or shortening
   3 tbsp. sugar
   1 tbsp. salt
   1 pinch baking soda

   Preparation : 
       Use enough all purpose flour to suit mixture.  The day before
   baking the bread, at noon place into a quart jar, 2 Irish potatoes
   sliced thin, 3 tablespoons sugar, 2 tablespoons corn meal, 1 pinch
   of baking soda.  Add 2 cups of boiling water.  Cover with plastic
   cover and set in a very warm place overnight.  The next morning a
   foam should have raised to the top of the jar.  Pour a cup of the
   liquid only from the jar into a bowl.  Add 3 tablespoons sugar, a
   pinch of soda, 1 pint sweet milk.  add enough flour to make the
   batch similiar to a paste.  Place in a warm place until double in
   size.  Add shortening to a mixture of salt and flour a little at a
   time.  Knead until similiar to other breads.  Put in greased pan
   about half full and let raise to top of the pans.   Bake in 375
   degree oven for 45 to 50 minutes.
