Cake That Won't Last

Ingredients:
3 eggs
3 cups flour
3 cups sugar
1 tsp salt
1 tsp cinnamon
1 tsp soda
1 cup vegetable oil
1/2 cup chopped pecans or walnuts
2 cups crushed bananas (preferably overripe ones)
10 oz. can crushed pineapple with juice
Directions:
A mixer is not needed for this cake. Put all of the dry ingredients in a large bowl,
then start adding the rest - bananas, pineapple, nuts and oil. Stir all together
and pour into a well greased & floured bundt pan or if preferred 2 loaf pans.
Bake in 350 degree oven for about an hour or until a toothpick comes out clean.
Turn bundt pan over about 10 minutes after removing from the oven and put a thin
glaze frosting while the cake is still warm (if desired). This is a good way to
use up left overripe bananas, and it freezes well.

1-8 ounce can crushed pineapple (with juice)
1 small bag coconut
2 bananas -- mashed
1 cup nuts -- chopped
Recipe Directions
Mix sugar, flour, and baking soda well. Add eggs to flour mixture. Add remaining
ingredients. Let stand 2 minutes. Pour into greased and floured bundt pan. Bake 350
for 1 hour and 15 minutes.

Mix all ingredients together. Don’t beat - just stir until blended.
Bake @ 350 degrees in bundt pan or loaf pan for 1 hour and 15 minutes.

Block Island Pound Cake
from "The Block Island Cookbook"
2 cups flour
3/4 tsp baking powder
3/4 tsp salt
2/3 cup milk
1 tsp vanilla
2/3 cup butter, softened
1 1/3 cup granulated sugar
2 ea eggs
1/2 tsp nutmeg(optional)
Preheat oven to 325°. Lightly grease a 9x5x3 inch loaf pan.
In a small bowl, sift together flour, baking powder, and salt. Set aside.
Add the vanilla to the milk and set aside. Blend together the butter and
sugar. Add the eggs one at a time and beat well.
Slowly stir the dry ingredients into the butter, sugar, and egg mixture ,
alternating with the milk/vanilla mixture. Do not over mix. Pour into the
prepared loaf pan and bake in the preheated oven for approximately 1 1/2 hours.
