Hi Uncle Phaedrus, 

There's a great restaurant in Long Beach, CA, called Jongewaard's Bake n Broil.  
They have the best baked goods (pies, cakes, muffins, cupcakes, quiche, etc.) and 
wonderful homemade soups (the vegetable beef is my favorite).  I would love any of 
their recipes, or "taste-alike" versions. I've been unsuccessful in my search so far.

Hungarian Filbert Torte with Mocha Frosting

Hi,

I’m looking for a recipe that is made with hazelnut, a little (1/4 cup) flour, bread crumbs. 
The cake or torte is filled with whipped cream and frosted with Mocha butter cream. I made 
this cake over 20 years ago, and I think it’s called Hungarian filbert torte; but I looked 
everywhere and could not find it, can you please help???

Hello Magda,

Where did you get the recipe originally? Most nut tortes appear to call for walnuts, and most have sweetened whipped cream for a topping.

I found a Hungarian Hazelnut Torte with mocha here: Taste of Home

There is an old Hungarian Filbert Torte recipe below, and below that is a “Log Torte” with a choice of nuts including filberts and a mocha filling. These are the closest recipes that I could find to your description.

Hungarian Filbert Torte — 
One-half cup of bread crumbs, one and one-half cups of powdered sugar, 
grated rind of one lemon, juice of one-half lemon, one-half pound of 
grated filberts, eight whites of eggs beaten stiff, eight yolks. Beat 
yolks and sugar very light, add bread crumbs and the rest of the 
ingredients in order, the beaten whites last. Bake in spring form pan 
for forty or forty-five minutes or bake in two layers with fresh 
strawberries or sweetened whipped cream between and on top of cake.

Log Torte
     
8 egg yolks
8 tbsp. sugar
1 tbsp. rum flavoring
8 egg whites, stiffly beaten
8 tbsp. white bread crumbs
8 tbsp. finely ground walnuts, almonds or filberts

Beat egg yolks and sugar until tripled and lemon colored. Add the flavoring, nuts and bread crumbs. 
Blend gently. Fold in beaten egg whites. Bake in a 10 1/2 x 15 1/2 x 1 jelly roll pan in 350 degree 
oven for 12 to 15 minutes. When done, immediately roll on towel sprinkled with powdered sugar. 
Cool and fill.

Nut Filling:

1 c. milk
2 tbsp. sugar
1 1/2 c. ground nuts
2/3 c. sweet butter
2/3 c. powdered sugar
1 tbsp. rum or flavoring
Cook ground nuts and sugar in milk until thick. Cool. Cream together well the butter, sugar and flavoring. 
Add to the cooled mixture and blend.

Mocha Coffee Filling:

1 c. strong coffee
2 sq. chocolate
2 eggs
1 tbsp. rum or flavoring
3 tbsp. flour, heaping
1/2 lb. sweet butter
8 tbsp. powdered sugar
Cook coffee, flour, eggs and chocolate until very thick. Cool completely. Cream butter and sugar and 
gradually add the cooled coffee mixture. 
Frost the filled roll with chocolate frosting and mark tree bark design on top of roll with prongs of a fork. 

Van De Kamp's Butter Ring Cake

Hello Betty, I had no success finding a recipe for Van de Kamp’s butter ring cake. The only mention that I could find of it was in old newspaper ads. There is a butter ring cake recipe below. Phaed

Butter Ring Cake

1 c. butter (1/2 lb.)
5 eggs
1 1/2 c. sugar
1 tsp. vanilla
1 tsp. lemon extract
1/3 c. milk
2 1/4 c. flour
2 tsp. baking powder

  Cream butter and beat in sugar, a little at a time.  Add yolks of eggs.  Add sifted flour and milk alternately.  
Add baking powder, vanilla and lemon extract.  Beat egg whites until firm and fold into batter.  
Bake for 1 hour at 350 degrees.  Cool and sprinkle with confectioners' sugar.
