Subject: A&S Snack Bar Custard
Dear Uncle Phaedrus,
I have been trying to find a recipe (or a reasonable facsimile) for a custard that was served in the snack bar
in A&S's flagship store on Fulton Street in Brooklyn, NY.
I remember the snack bar was in the basement of the store. They served two flavors: vanilla custard with
chocolate sauce or strawberry sauce. The custard itself was not very eggy; it was more like what we know
as crime brulee today. The time was the late 60s, early 70s.
Please let me know if you need any additional details.
Thank you for your help.
Donna
Hi Donna,
I had no success finding a recipe for this custard that was served in a parfait glass with a long spoon coated
with chocolate or strawberry syrup at A&S or Gertz Department Stores. Lots of people would like to have such a recipe.
There are dozens of posts about it on these sites:
Chowhound
Fodor's
Department Store Museum
I found statements three times that this custard was dispensed from a machine called a Sweden Soft Server.
“Sweden” is a brand – a company that makes commercial milkshake, ice cream, and soft-serve machines.
There is a photo of one here:
YowCow
These machines often use a commercial, pre-made mix to make milkshakes and soft-serve. If that was the case at A&S/Gertz,
then not even former employees would know how to make the mix, because it was bought from a vendor, not made by A&S/Gertz.
I wouldn’t count on finding the actual recipe. I’ll post this request in the hopes that someone can recommend a “tastes-like”,
but no one has ever posted one, although there are dozens of requests for it on message boards. Perhaps a former employee
remembers the brand of the mix used for it.

Thank you for replying so quickly and sending me these links. They're very interesting and it's good to know I'm not
the only one who remembers this custard. I'll try the Bavarian Custard recipe and visit your site periodically to
see if anyone responds to this request. I'm sure I'll think of other lost recipes to search as well.

Subject: Recipe Request
Dear Phaed,
I am still looking for a couple of critical recipes to sustain human life ...
Rio Vista, a now closed all-you-can-eat catfish and fried chicken joint in Atlanta had the world's best hush puppies.
I've asked for these before, but just looking for updates.
Next, the recipes for the vinegar-based BBQ sauce and Brunswick Stew served at The Old Brick Pit BBQ located in
Chamblee, Georgia - any help?
Many thanks, as always.
Mike
Hi Mike,
Sorry, still no luck with Rio Vista recipes.
I did a thorough search, but I had no success with any recipes at all from The Old Brick Pit.
I’ll post this.

Over the years, I have had multiple requests for a barbecue sauce recipe from Love's Pit BBQ, which was a popular Southern California chain.
I never found one, but while searching for something else today, I found a video and recipe for a re-creation of Love's Wood Pitt BBQ's barbecued
chicken here: Love's BBQ Chicken & Sauce.
Phaed
This sauce recipe, which the video says is Love's, is given with the video:
2 cups cider vinegar
3 1/2 cups brown sugar
2 tablespoons salt
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons celery seed
1 tablespoon black pepper
1 tablespoon paprika
2 tablespoons lard
1/4 cup pickling spices
