Looking for the steamburger recipe like used to get at our Kresge lunch counter
in the 1960's. ( NOT the chili version). Thanks much

Hi Gene,

Sorry, I can’t find even a mention of Kresge’s serving a “steamburger.” I searched using “steamburger”, “steam burger,” and “steamed burger” and “steamed hamburger.” No results with any of those, not even a nostalgic mention. I found a couple of scans of Kresge’s menus, but neither had a “steamburger” listed, just a “hamburger”. Perhaps Kresge’s just called them “hamburgers”, but steamed them rather than grilling or frying them? I couldn’t find a recipe for Kresge’s hamburgers, either.

The years of '75-'78 at Lincoln High in Lincoln Heights were most tasty for me because
of their tuna sandwiches. i haven't been able to replicate it. Would you help me to
recreate the Sammie from my days of my youth, please.
Thanks, joaquin

Hello Joaquin,

I searched for a tuna salad or tuna sandwich recipe from any Lincoln High School or Lincoln Heights High School at all, and I had no success. Sorry.

Hough Bakery Crumb Cake

Subject: Hough Bakery Crumb Cake

When I was younger, my parents and grandparents used to purchase what I believe was a
crumb cake at Hough Bakery. The one unique aspect of this crumb cake was that there
was a 1/4” to 1/2” layer of a creamy, buttery-flavored substance layered between the
cake itself and the crumb topping.

Any ideas as to what this unique layer is, and /or how to make it?

Hello Craig,

I had no success finding the actual Hough Bakery crumb cake recipe. There is a recipe here that claims to taste just like it: Hough Crumb Cake

However, neither that recipe nor any other crumb cake recipe that I’ve seen has anything in particular that goes between the top of the cake and the crumb topping. I don’t know what that could be.

I’ll post this for reader input.

Hmmmm….wonder if it’s basically the same recipe, but due to some minor tweaking at
Hough Bakery, perhaps some of that 1lb of butter settled below the crumbs!
(some recipes call for 1lb of butter, some use less).

Might be. I thought about that, too, but I wasn’t sure, so didn’t mention it.
