Well, if you mean the sweet potato fries with aji pepper sauce that are served with the Ultimate Recipe Showdown winning Peruvian Herb-Roasted Chicken, see below.

  Sweet Potato Fries:

  4 sweet potatoes boiled for about 30 minutes
  Allow to cool before peeling
  After removing the skin, cut into french fry sticks
  Fry in a deep fryer until dark and crispy
  Salt to taste

  Aji sauce:

  1 cup of cream of aji (6 to 9 ajies in the blender with salt, 1 clove of garlic, 
   ground black pepper, and 1/2 cup oil) 
  1 1/2 tablespoons olive oil 
  2 green onions, chopped 
  2 tablespoons lime juice 

  Mix cream of aji, olive oil, green onions, and lime juice in a medium bowl.

See below for the green bean fries & wasabi dipping sauce.

  Copycat Crispy Green Bean Fries (TGI Friday's)

  4 servings 

  Wasabi Cucumber Ranch Dip 

  1/2 cup bottled ranch dressing (Hidden Valley is best) 
  1/4 cup cucumbers, peeled, seeded, minced 
  1 tablespoon milk 
  1 1/2 teaspoons prepared horseradish 
  1 teaspoon cider vinegar 
  1 teaspoon wasabi powder 
  1/8 teaspoon salt 
  1 pinch cayenne pepper

  Green Beans 

  1 egg, beaten 
  1 cup milk 
  4 cups vegetable broth or chicken broth 
  6-8 ounces fresh green beans 
  1 cup flour 
  1 cup plain breadcrumbs or seasoned dry bread crumbs 
  3/4 teaspoon salt 
  1/4 teaspoon onion powder 
  1/8 teaspoon garlic powder 
  vegetable shortening, for frying or vegetable oil 

  Combine dip ingredients in blender. Blend until smooth. Place in bowl; cover and chill 
till ready to use. Dip will thicken as it chills. 

  Place beans in the broth. Bring to a boil and cook 15 minutes, then place in cold water 
to stop cooking process. 

  Mix beaten egg with milk in a shallow bowl. Measure 1 cup of flour into another shallow bowl. 
  Combine bread crumbs, 3/4 teaspoons salt, black pepper, onion powder and garlic powder into 
a third bowl. 

  Take a handful of beans out of the water and shake off excess liquid. Coat the beans with 
the flour, shaking to remove excess flour. Dip the beans, one at a time, into egg/milk mixture, 
then dip in breadcrumb mixture. Place the beans on a plate until all are coated. 

  Heat the shortening or oil to 350*F in a heavy skillet(or use deep fryer). Use enough to 
cover the beans, about 1 1/2 inches. Fry until golden brown, about 1 1/2 minutes. Drain on 
paper towels. 

  To serve, place on a large platter and serve with the wasabi cucumber ranch dip.

Lazarus Department Store Cheesecake

Shillito's Lazarus Cheesecake

This is the cheesecake recipe used by Shillito's Department Store (AKA Lazarus Dpt. Store) 
bakery in Cincinnati, Ohio.

Crust:
18 single graham crackers, crushed
1 tablespoon granulated sugar
3 tablespoons melted butter

Filling:
1 cup granulated sugar
24 ounces cream cheese
5 eggs
1 1/2 teaspoons vanilla extract
1 tablespoon fresh lemon juice

Topping:
1 pint sour cream
1/2 cup granulated sugar
1 1/2 teaspoons vanilla extract

Mix together the crust ingredients and press into a 10-inch springform pan.

In mixer or food processor mix together the sugar and cheese. Add the eggs, one at a time 
and stir in the vanilla and juice. Pour over crust.

Bake in a preheated 300 degree F oven for 1 hour to 1 hour and 10 minutes, until set and puffed.

Stir together the topping ingredients. Remove cake from oven and spread over the topping. 
Return to oven for 10 to 15 minutes.

Cool and chill.

Chicken Outside the Box #3

People are always looking for new chicken recipes. Okay, I'm doing some looking outside the magazines and usual cookbooks.

Here's another one.

Chicken Stuffed Potato Patties  

Ingredients:
  
2 Pounds Potato -- peeled 
2 Medium Eggs -- beaten 
1 Medium Onion -- finely chopped 
2 Cloves Garlic -- finely chopped 
1/4 Teaspoon Salt 
1/4 Teaspoon Turmeric 
1/8 Teaspoon Cinnamon 
6 Sprigs Parsley -- finely chopped 
1/2 Pound Chicken Breast -- cooked and chopped 
1/8 Teaspoon Cinnamon 
1/8 Teaspoon Pepper 
1/2 Cup Flour -- for dusting 
Oil -- for frying 
 
Directions:

Cook potatoes in water until soft about 15 minutes. Drain well and mash. Add eggs, onion, 
garlic, salt, turmeric, cinnamon and parsley. Mix well. Combine chicken, cinnamon and pepper. 
Set aside. Spread flour on cutting board. Put mashed potatoes on the board and flatten into 
a 3 inch wide by 2 inch deep by 1 foot long log. Make a trench down the center of the log. 
Put the chicken into the trench, then pinch the trench shut, covering the chicken. Cut the 
log into 8 round patties. Dust with flour. Heat oil in skillet and deep fry until golden brown. 
Drain and serve. Can be served like a hamburger or just eaten with a side dish. 
Serves 8
