Hi phaedrus

I am glad I found your web site....
Can you please help me find the recipe for Kibbee, but not any Kibbee..
I am looking for "Kibbee Hammoud".
It is Middle Eastern, made with Grounded Rice balls mixed with a little
and stuffed with a mixture of Minced Lamp and Onion and spices. then the
soup is made of chunks of Lamp on the bone, Turnip, Lemon Juice and spices.
after the soup is cooked those rice balls are dropped onto it... then after
it is cooked well... yum yum

the soup is easy enough to make. but I couldn't find a recipe for those rice
balls (I used to get them frozen from some shops).
the closest I got was this web Page... with instruction how to buy a CD for
this specific recipe!

although the soup seems a bit different in here, still it is very close.

Thank you and good luck...

Sincerely,

Hadeel

Hello Hadeel, The below recipe is the only one that I could locate for kibbe hammoud. I hope it helps.

(serves 4-6 people)

Method

Mix chopped onions with minced lamb, in a food processor, then add spices,
salt, and saffron with rose water. Keep aside as the filling.
Grind the soaked rice to powder.
Add the mince beef and salt, mix and put twice in food processor.
Fill the beef mixture with the lamb and onions mixture, make a torpedo shape
with moist hands.
If not using it the same day, freeze them.

To cook Kibbe Hammoud

6 cloves garlic chopped
2 peeled and chopped tomatoes
2 tablespoons of tomato paste
1 lamb stock cube
3 lemon juice
one cucumber, peeled and cut into thin finger shapes

  Subject: lost recipe

I am looking for a lost recipe. I have looked at more recipe sites that
I can remember in this search, but to no avail. I saw your site mentioned
in several places as a good place to come to.
It was on the box of Kraft philly light cream cheese many years ago and
I'm pretty sure it was called "spinach ricotta pie". Besides spinach and
ricotta and cream cheese, it had oregano which made it so yummy.
  Thanks so much..
  Gail

   1/8 tsp. pepper
   3/4 c. chopped fresh tomatoes
