Subject: very special recipe
Dear Phaedrus,
I read all your instructions and I am aware that you would prefer we not ask
you for magazine recipes but I promise you that I have searched the Internet,
Googled it, searched the recipe sites and have even taken all similar ones
off your own site but I still not have found the exact recipe I need.
It Is for "Beef Wellington" that was in a magazine called McCall's Cooking
School Magazine.
I made it for the first time as a young wife and at my first dinner party,
my now 35 year old daughter made it with me when she was 16. She now asked
for the recipe to make it for her first dinner party at her new home and
I cannot find the magazine with the recipe in it.
The ingredients were obviously the beef, Madeira wine and pate - But the
difference as I remember were - it included vegetables like celery, carrots,
garlic and you cooked them down, chopped them in a blender , then put them
in cheese cloth using a wooden spoon to twist the cloth down and squeeze the
juice out, throwing away the left over vegetables. I also remember shallots-not
onions, and it used parchment paper not frozen puff pastry.
I am sure that this seems silly to you since there are so many recipes online,
but I have made others and they are just not the same.
Either way thank you for your time. I appreciate the effort you make for all of us.
Sincerely,
Patti
Hi Patti,
I don't really mind looking for magazine recipes when someone provides as much
detail about the lost recipe as you have provided.
However, I had no success locating a Beef Wellington recipe such as you describe,
either with the name "McCall's Cooking School" attached to it or not.
This leaves three avenues of pursuit:
1) You can purchase a copy of "The McCall's Cooking School Cookbook". This book is
a collection of recipes from the magazine. There are used copies available at Amazon.com:
Amazon
There is a review of it here:
Amazon
The review says that there is a Beef Wellington recipe in the cookbook. However,
it does not give a description of the recipe, so there is no guarantee that it is
the same recipe. The drawback is that you may not get it in time for the dinner party.
You can get expedited shipping and might get it in less than a week. The used copies
start at around $15.00 plus shipping.
2) I have a group of helpers that, taken together, have a huge library of cookbooks
and cooking magazines. I don't know that any of them specifically has the McCall's
Cooking School Magazines or cookbook, but I will send out an e-mail today, requesting
their assistance. If they have it, I will send it to you as soon as I receive it.
If you don't hear from me, I will not have had any success.
3) If the recipe has not been found in a couple of weeks, I will post your request
on my site. There is always the possibility that one of my readers will have the recipe
and will send it. The drawback with this is that would be February before your request
would appear on my site.

Dear Phaed,
First, thank-you so, so, much for getting back to me so quickly. I did not expect
that and I am very appreciative.
I took the best 3 recipes from your site and a recipe for a
classic french brown sauce with Madeira wine; hobbled something together for her
from all three. She will know the difference, her guests will not as this is their
first time eating it.
Her actual 35th birthday is at the end of Feb. She, my granddaughter, son-in-law
are coming for a long visit as he is Air Force Medic just home from overseas.
I would love to make the correct one & surprise her.
I already took your advice about the book; plan on ordering it tonight but I
already found out by asking seller it is impossible to find out what recipes
are in book and I found there are 3 different volumes.
So while I order the 1st if you would ask your readers as mentioned in your #2; 3,
I would be grateful.
Also please keep me in mind for other answers you are looking for, I have an
extensive cookbook Library that includes books, magazines, recipe cards, etc.
My husband had to build special bookshelves to hold it all. I would love to try
and return the favor.
Thanks Again,
Patti

Subject: Recipe request
I would like the recipe for Oysters Bienville that were served at Captain Bilbo's
in Memphis, Tennessee, about 15-20 years ago. We have ordered them all over the
country and have never gotten them as good as those were. Thanks for any help.
Hello Pat,
I did a thorough search yesterday for any Captain Bilbo's recipes. I had no success.
The only one that is available is the Crab au Gratin that is on my site.

Do you have a recipe for: Captain Bilbo's Seafood Casserole? It was my favorite
dish on the menu.
I see you have the Crab Au Gratin one.
Patricia
Hi Patricia,
The Crab au Gratin recipe was printed in the Memphis newspaper and a reader
sent it to me - that's how I got that one. I wrote to her and she said they
haven't printed the seafood casserole recipe, but she'll write to their food
department. If she does get it, I'll send it on.
