Phaedrus
Sour Cream Coconut Cookies
1/2 c. shortening
1 1/2 c. sugar
2 eggs
Mix above ingredients. Stir in:
1 c. sour cream
1 tsp. vanilla
Stir in:
1 c. coconut
2 3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
Bake at 425 degrees for 8 to 10 minutes.

Coconut Cookies
2 c. brown sugar
1 c. sour cream
4 c. flour
1 level tsp. baking soda
1 c. butter
2 c. coconut
2 tsp. baking powder
Pinch of salt
Mix all ingredients. Drop from spoon onto greased cookie sheet.
Bake in 350 degree oven for 10 to 15 minutes. Makes about 6 dozen.

Coconut Sugar Cookies
1 c. shortening (I prefer butter)
2 c. sugar
2 eggs, beaten
1 tsp. vanilla
1/2 tsp. grated lemon rind
4 1/2 c. sifted flour
1 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
2/3 c. sour cream
1 c. coconut
Can be rolled out and cut with cookie cutter or make out in balls and press down.
Bake at 350 degrees for 10-12 minutes.
