Woolworth's Fried Liver & Onions

Woolworth's Fried Liver 
16 servings

Beef Liver			3 lbs
Patent flour 			2 oz
Salt & Pepper Mix		1/8 oz (3/4 tsp)

Wipe liver with damp cloth and dry thoroughly. Combine flour
and spices. Dredge liver in flour mixture

Shortening or Bacon fat	8 oz (bacon fat is preferable)

Brown liver quickly on both sides. Reduce heat and cook slowly
about 7 - 8 minutes until center is just done. Do not overcook.
Over cooking makes liver tough.

Woolworth's Liver Gravy
1 1/2 quarts

Fried liver pan drippings	2 oz
Patent flour			2 oz

To fried liver pan drippings, add flour. Blend with wire whip on 
low flame. Take care not to burn.

Standard B-V stock*		1 quart 2 oz

Add warm stock slowly and stir with wire whip to prevent lumping.
Bring to boil and cook gently for 5 minutes. Strain if necessary.

*Standard B-V** stock is made by adding 1 oz B-V concentrate to 1 quart
boiling water. Stir to dissolve.

**B-V is a commercial beef broth concentrate for making gravies and sauces. 
It's available at Walmart, etc.

Woolworth's Fried onions
16 portions

Onions				2 lbs 8 oz
Onions(after cleaning)		2 lbs 2 oz
Shortening			3 oz
Salt & Pepper mix		1/2 oz

Remove skins from onions. Cut down lengthwise, then cut across in thin
slices.Add to hot shortening. Cover and steam for 10 - 15 minutes. Uncover.
Fry vigorously until onions are a golden brown.Stir to insure uniform browning.

Woolworth's Onion Sauce

Woolworth's Onion Sauce
1 quart

Shortening 			1 oz
Onions				6 oz

Slice onions very thin. Saute in melted shortening until tender - about
10 minutes.

Shortening			3 1/2 oz
Patent Flour			2 oz

Blend flour with melted shortening. Cook on low flame - stirring with
wire whip - about 5 minutes.

Standard B-V Stock(see above)	1 quart

Add warm stock gradually. Bring to a boil. Simmer 5 minutes. Add sauteed onions.
Used with hamburger steak, meatloaf, etc.

Woolworth's Mushroom Sauce

Woolworth's Mushroom Sauce
1 quart

Shortening			1 oz
Mushrooms			4 oz

Wash and thinly slice mushrooms. Saute in melted shortening until tender -
about 15 minutes

Shortening			3 1/2 oz
Patent Flour			2 oz

Blend flour with melted shortening. Cook on low flame, stirring with wire
whip - about 5 minutes.
 
Standard B-V Stock(see above)	1 quart

Add warm stock gradually. Bring to a boil. Simmer 5 minutes. Add sauteed mushrooms.
Used with hamburger steak, meatloaf, etc.
