I found your page after searching for palmetto cake on Google. I have a
different palmetto cake recipe, which you might be interested in. My
mother made it every year at Christmas time, for as long as I can
remember. We are from south Central PA, just north of Hagerstown, MD.
Palmetto Cake
1 lb powdered sugar
5 eggs, beaten
1/2 lb butter
2 tsp. baking powder
3 1/2 c flower
2 tsp coconut juice
1 small coconut, grated
1 lb white raisins
4 oz citron
4 oz candied cherries
4 oz candied pineapple
1 c chopped almonds
Cream butter and sugar, then add eggs and coconut juice. Stir baking
powder into flour, and then add to creamed mixture. Flour fruit, and
stir in along with remaining ingredients. Bake at 275 degrees for 3
hours.
My mother would place the pan low in oven.

I forgot to mention, this cake is baked in an Angel Food cake pan. We
grease the pan with Crisco, and line the bottom with a circle of kraft
paper (which we cut from a grocery bag). You could also use wax paper or
parchment paper, I guess.

Krumkake
Ingredients :
1/2 c. butter
1 c. sugar
1 c. milk
1/2 tsp. vanilla
2 eggs
1 1/2 c. flour
Dash of salt
Preparation :
Mix together with electric mixer until smooth. Place
approximately 1 tablespoon of butter on preheated krumkake iron.
Heat until light brown on one side, then turn iron to bake other
side. Remove from iron and roll on krumkake cylinder. Remove from
cylinder when cool. Makes 2-3 dozen.

Krumkake
Ingredients :
3 eggs, well beaten
1/2 c. sugar
1/2 c. butter
1/2 c. flour
1 tsp. vanilla
Preparation :
Add sugar to eggs and beat. Melt the butter and add to the
mixture, but be sure the butter isn't too hot when adding. Then add
the vanilla and the flour. This is easier to handle when chilled
overnight or for several hours. Place one teaspoon of dough on a
hot Krumkake iron and bake. When done, roll it immediately in a
straw shape or cone. Keep in a tight container.

Krumkake (Rolled Wafers)
Ingredients :
3 eggs
1 c. sugar
1 2/3 c. sifted all-purpose flour
1/4 tsp. ground cardamon
1/4 tsp. salt
1 c. heavy cream
Preparation :
Beat eggs and sugar until very thick. Sift flour, cardamon and
salt together. Add alternately with cream to egg mixture. Heat
krumkake iron to moderately hot on top of range. Do not allow to
become too hot, as cookies are fragile and will burn. Drop a
tablespoonful of batter on hot iron, bring cover down, but do not
press hard. Cook over moderate heat about 30 seconds on each side.
Peel cookie from iron. Quickly roll around wooden towel (or
cone-shaped form (whichever comes with your iron). Cookie will
stiffen at once and may be removed from form when you're ready to
roll the next cookie. Serve as is, or, just before serving, fill
with whipped cream flavored with rum or brandy extract. Makes about
3 dozen.

Fattigman - Swedish Pastry
Ingredients :
3 eggs
3 tbsp. cream
3 tbsp. sugar
1/2 tsp. salt
Flour
Powdered sugar
Preparation :
Make a stiff dough. Roll out and cut into strips. Fry in hot
oil until brown. Roll into powdered sugar.

Ingredients :
6 egg yolks
1/4 c. sugar
1 tbsp. melted butter
1/2 tsp. salt
6 tbsp. sweet cream
1 tsp. vanilla
2 c. flour
Preparation :
Beat egg yolks until thick and lemon colored. Gradually beat in
sugar. Add rest of ingredients. Chill dough. Roll thin. Cut in
diamond shape and fry in deep fat at 375 degrees for 2 to 3 minutes
or until golden brown. Dust with powdered sugar.

6 egg yolks
6 tbsp. cream
1/8 tsp. ground cardamom
6 tsp. sugar
1/8 tsp. salt
2 c. flour
Preparation :
Beat eggs and sugar; add cream, salt, cardamom and flour. Roll

Ice Cream Cookies
Ingredients :
1 lb. butter, softened
4 c. flour
1 pt. vanilla ice cream
Preparation :
Combine butter and flour. Add ice cream. Form dough into 1 inch
balls. Place on ungreased cookie sheet and flatten, using thumb to
make an imprint. Fill imprint with jam or preserves. Bake at 350
degrees for 20-25 minutes. When slightly cool, sprinkle with
confectioners' sugar.

Ingredients :
1 lb. butter or oleo
1 pt. vanilla ice cream
4 c. flour
Preparation :
Let butter and ice cream get to room temperature (melted). To
this, add 3 cups flour. Blend together until sticky. Then add last
cup of flour. Work this into a nice dough. Then chill about 1
hour. Bake at 350 degrees for about 20 minutes. Use egg white to
seal cookies. When done folding, dip in sugar.

Mix all ingredients into a smooth dough. Form into a ball size

preserves. Bake at 350 degrees until brown. Cool and sprinkle with
10x sugar. Very easy.

1 tsp. rum extract
1 1/4 c. raisins
3/4 c. raspberry jam
Preparation :
Combine first four ingredients. Mix thoroughly. Chill dough.
Shape into 1 inch balls. Place on ungreased baking sheet. Make a
dent in center of each cookie. Mix raisins and jam together. Spoon
raisin mixture into each cookie to fill in dent. Bake at 350
degrees for 25 minutes.

Jello Strawberries
Ingredients :
1 can Eagle brand condensed milk
2 pkgs. strawberry Jello
3/4 to 1 lb. coconut
1 cup Chopped pecans or other nuts
1 tbsp. sugar
1/2 tbsp. red food coloring
Preparation :
Mix milk and 1 1/2 packages Jello. Mix in coconut, sugar and
food coloring. Let stand in refrigerator overnight. Shape into
strawberries and roll in remaining Jello. (Roll about 1 teaspoon
in palm of hand to make it compact, then shape into berry.) Put
green icing on top and use almond sliver for stem.

Ingredients :
1 1/2 c. whole wheat flour
1/2 tsp. salt
1/2 c. vegetable shortening
3 tbsp. water
Preparation :
Preheat oven to 425 degrees. Mix all ingredients together with a
fork. Roll out and put in pie pan. Prick bottom and sides and bake
10-15 minutes. (If using for Pecan Pie, do not prebake.)

Ingredients :
1 c. whole wheat flour
1/4 c. wheat germ
1 tsp. salt
1/3 c. corn oil
3 tbsp. milk
Preparation :
Combine flour, wheat germ, and salt. Add corn oil and milk. Mix
lightly with fork until mixture is moist but not sticky. Roll out
and place in pie pan. Bake 8 minutes at 475 degrees.

Mix well. Form into 5 dough balls. Chill. Roll out between

minutes.

Ingredients :
2 - 2 1/2 c. whole wheat flour (pastry flour is best)
1/4 tsp. salt
1/2 c. oil
1/2 c. water
Preparation :
Stir salt and flour together. Make a hole in dry ingredients.
Pour in oil and water. Mix lightly to form a dough. Roll out on
floured surface. Makes enough for 1 (9" or 8") pie shell with top
or 3 to 4 tart pans.
