  Cheesecake  Cookies

   Ingredients : 
   1 c. flour
   1/3 c. butter, softened
   1/2 c. firmly packed brown sugar
   1/2 c. chopped walnuts
   1 (8 oz.) pkg. cream cheese, softened
   1/4 c. sugar
   1 egg
   2 tbsp. milk
   2 tbsp. lemon juice
   1/2 tsp. vanilla

   Preparation : 
      In large mixer bowl, combine flour, butter, and brown sugar. 
   Blend until particles are fine.  Stir in nuts.  Reserve 1 cup for
   topping. Press remainder in ungreased 8 inch square pan.  Bake at
   350 degrees for 12 to 15 minutes.  Combine remaining ingredients
   well.  Spread over partially baked crust.  Sprinkle with reserved
   crumb mixture. Bake at 350 degrees for 25 to 30 minutes.  Cool; cut
   into squares.

   Chewy  Cheesecake  Cookies

   Ingredients : 
   1 c. butter, softened
   2 (3 oz.) pkgs. cream cheese, softened
   2 c. sugar
   2 c. flour
   1 c. pecans

   Preparation : 
      Cream butter and cream cheese.  Add sugar while beating until
   light and fluffy.  Add flour and mix.  Stir in nuts.  Drop on cookie
   sheet 2 inches apart.  Bake at 375 degrees for twelve minutes.  Cool
   2 to 3 minutes before removing.   Makes 5 dozen.

   Cheesecake  Cookies

   Ingredients : 
   1 c. flour
   1/3 c. brown sugar
   1 c. pecans, chop fine
   1 stick real butter

   Preparation : 
      Mix and press in 13 x 9 inch dish.  Bake at 350 degrees for 15
   minutes. 1 c. sugar 3 eggs 1 tsp. vanilla   Blend cream cheese and
   butter well.  Add eggs and vanilla.  Pour over baked crust and bake
   20 minutes.  Remove from oven and pour following mixture on top: 6
   tbsp. sugar 1 tsp. vanilla   Bake 3 to 5 minutes.  Cool; then
   refrigerate.

   Cheesecake  Cookies

   Ingredients : 
   8 oz. cream cheese
   1 egg yolk
   1 yellow cake mix
   1/4 c. butter
   1/4 tsp. vanilla

   Preparation : 
      Cream cheese and butter together.  Mix together egg yolk and
   vanilla. Alternate a small amount at a time to the yellow cake mix. 
   Drop by a small teaspoon on ungreased cookie sheet.  Bake 375
   degrees for 8 to 10 minutes.

   Cheesecake  Cookies  (From  Dinah  Shore)

   Ingredients : 
   1/3 c. butter, melted
   1/3 c. brown sugar, firmly packed
   1 c. flour
   1/2 c. nuts, chopped
   1 (8 oz.) pkg. cream cheese
   1/4 c. sugar
   1 egg
   1 tbsp. lemon juice
   2 tbsp. cream or milk
   1 tsp. vanilla

   Preparation : 
      Mix brown sugar, chopped nuts and flour together in large bowl. 
   Stir in melted butter and mix with your hands until light and
   crumbly. Remove 1 cup of the mixture to be used later as a topping. 
   Place remainder in an 8 inch square pan and press firmly.  Bake at
   350 degrees for about 12 to 15 minutes.  Beat cream cheese until
   smooth with the 1/4 cup sugar.  Beat in the egg, lemon juice, milk
   and vanilla.  Pour onto baked crust.  Top with reserved crumbs. 
   Return to oven and bake about 25 minutes.  Cool thoroughly and cut
   into 2 inch squares.  NOTE:  These can be baked the day before. 
   Cover with plastic wrap and keep refrigerated.  Each cookie can also
   be topped with a fresh strawberry or maraschino cherry, if desired. 
   Makes 16 cookies.  

Irish Cream

  1 cup whisky 
  11/4 cups cream 
  2 large Tbls. chocolate syrup 
  3 eggs 
  2/3 can sweetened condensed milk 
   
   
  Beat eggs. 
  Add all other ingredients except cream and stir. 
  Add cream and lightly stir into whisky mixture.

   Irish Creme Liqueur 
   
  Ingredients: 
  1 cup Eagle Brand condensed milk 
  1 cup Irish whiskey (Jameson, Bushmills, Tullamore) 
  1/3 cup rum 
  1 pint (2 cups) half & half 
  2 Tablespoons chocolate syrup 
  1 teaspoon vanilla 
  Mix slowly in blender. Makes approximately one 'fifth.' Keep 
  refrigerated for no more than 2 weeks! 

Dark Sweet Cherry Pie

  Cherry  Pie

   Ingredients : 
   2 (16 oz.) cans semi-sweet dark cherries, in own juice or water
   1 tsp. almond extract
   3 tbsp. tapioca
   Sugar substitute, suitable for baking to taste
   Double pie crust recipe, 9"

   Preparation : 
      Make pie crust according to your favorite recipe.  In bowl,
   combine cherries with juice, almond extract, tapioca and sugar
   substitute. Mix well and pour into the pie crust.  Put the top 
   crust on and cut slits.  Bake at 400 degrees for 1 hour.

   Washington's  Cherry  Pie

   Ingredients : 
   1 Keebler Ready-Crust butter flavored pie crust
   1 (16 oz.) can dark sweet pitted cherries, chopped & drained (reserve juice)
   15 lg. marshmallows
   1/4 tsp. almond extract
   1/2 pt. heavy cream, whipped

   Preparation : 
      Measure cherry juice and add enough water to make 1 cup liquid;
   heat until hot, but not boiling.  Add marshmallows and stir until
   dissolved.  Chill mixture until slightly thickened.  Beat with mixer
   or whisk until thick and creamy. Stir in almond flavoring.  Fold
   cherry mixture into 1/2 of the whipped cream along with chopped
   cherries.  Pour into butter shell and freeze 5 to 7 hours. Garnish
   with remaining whipped cream and top with a cherry.

   Black  Cherry  Pie

   Ingredients : 
   2 (3 oz.) pkg. cream cheese, cut up
   1 (3 oz.) pkg. black cherry Jello
   1/2 c. water
   2 egg yolks, slightly beaten
   1 (8 oz.) plain yogurt
   1/4 tsp. ground nutmeg
   2 egg whites
   2 tbsp. sugar
   1 (16 oz.) can pitted dark sweet cherries, drained & halved
   1 graham cracker pie shell
   Unsweetened whipped cream

   Preparation : 
      In a saucepan, combine cream cheese, cherry gelatin, water and
   beat egg yolks.  Cook and stir about 6 minutes, or until the gelatin
   is dissolved and the mixture is slightly thickened.  Remove from
   heat. Beat the yogurt and nutmeg into the gelatin mixture until the
   mixture is smooth.  Chill to the consistency of corn syrup, stirring
   occasionally.  meanwhile, wash beaters thoroughly.  Beat the egg
   whites until soft peaks form; gradually add the sugar, beating until
   stiff peaks form. When the gelatin is the consistency of unbeaten
   egg whites (partially set), fold the egg whites into the gelatin
   mixture.  Fold the drained cherries into the gelatin mixture; chill
   until the mixture mounds when spooned.  Turn into the graham cracker
   pie shell. Chill at least 3 hours, or until set.  If desired,
   garnish with whipped cream.  Makes 8 servings. 

Poor Man's Fruitcake

  the poor mans fruitcake...the only fruit was raisins.
  She made it in an angel food cake pan & it filled it & was
  very light....

Below are the recipes that I found like that.

  Poor  Man's  Fruit  Cake

   Ingredients : 
   2 c. water
   1# box raisins
   2 c. sugar
   2 tsp. cinnamon
   2/3 c. oil
   1/2 tsp. salt
   2 tsp. cloves
   2 tsp. nutmeg

   Preparation : 
      Mix all ingredients in a large kettle.  Bring to a boil for 5
   minutes.  Let cool.  Remove to large bowl and gradually add: 1 tsp.
   baking soda 4 c. flour 1 c. chopped nuts   Bake in a large loaf pan
   at 350 degrees for 35 to 40 minutes or when toothpick inserted in
   middle comes out dry.

   Poor  Man's  Fruit  Cake

   Ingredients : 
   1 lg. box raisins
   3 c. water
   1/2 c. shortening
   2 c. sugar
   1 tsp. cinnamon
   1 tsp. cloves
   1 tsp. salt
   1 tsp. baking soda
   4 c. flour

   Preparation : 
      Cook raisins in 2 cups of water on top of stove for 15 minutes.
   Remove from heat and add 1 cup of cold water.  Add all remaining
   ingredients and mix by hand until smooth.  Pour into turkshead pan
   and bake at 350 degrees for 50 minutes or until tester comes out
   clean. Turn out and sprinkle with confectioners sugar.

   Poor  Man's  Fruit  Cake

   Ingredients : 
   1 box raisins
   1 box brown sugar
   1 tsp. cinnamon
   1/2 tsp. cloves
   1/2 tsp. nutmeg
   1 tsp. salt
   1 c. nuts, optional

   Preparation : 
      In very large pot:  Pour 3 cups boiling water over all above
   ingredients and boil for 5 minutes.  Dissolve 2 teaspoons baking
   soda in 1/2 cup boiling water (be careful, this will bubble up so
   you need large container).  Add to mixture and cool.  Add 3 1/2 cups
   flour and pour into greased loaf pans.  Bake at 300 degrees for 60
   minutes.  Makes 2 loaves.

Hi sandy,

I did find some "cheddar cheesecke" recipes, but they all have both cheddar AND cream cheese. I could not locate a recipe that used only yellow cheese.

Cheddar Cheesecake

1 6 oz package ginger snaps, crushed
3 tablespoons sugar
6 tablespoons butter or margarine, melted
4 8 oz packages of cream cheese
8 ozs finely grated medium cheddar cheese
1 3/4 cup sugar
3 tablespoons flour
5 eggs
3 egg yolks
1/4 cup beer

Combine crumbs, sugar and melted butter and press firmly on bottom
and sides of a 9" springform pan. Chill briefly before filling.
Let cream cheese soften in a large mixing bowl; beat in the cheddar
until smooth; add sugar and flour and beat until fluffy. Add eggs
and yolks one at a time, beating after each addition. Stir in the
beer then pour into the crumb crust. Bake in a very hot oven (475
F) for 12 minutes. Lower the heat to 250 F and bake for 1 1/2
hours. Turn off the oven and leave the cake in there for 1 hour.
Remove. Cool completely on a wire rack before removing the ring
from the pan.

 Ingredients :
 1 1/2 c. graham cracker crumbs
 2 tbsp. sugar
 6 tbsp. butter, melted
 32 oz. cream cheese, softened
 2 c. shredded cheddar cheese
 1 3/4 c. sugar
 3 tbsp. flour
 5 eggs
 3 egg yolks
 1/4 c. beer

 Preparation :
    Blend crumbs, 3 tablespoons sugar and butter.  Press firmly into
 9" spring form pan and refrigerate until ready to fill.  Beat cream
 cheese with cheddar cheese until just smooth.  Add sugar and flour
 and beat until light and fluffy.  Add eggs, one at a time, beating
 well after each addition.  Stir in beer and pour into crust.  Bake
 at 475 degrees for 12 minutes then 250 degrees for 1 1/2 hours.  Let
 cake remain in oven 1 hour after turning off.  Remove from oven and
 cool completely on wire rack.  Top will crack.

 Royal  Cheddar  Cheesecake

 Ingredients :
 Crust:
 1 1/2 c. Zweibach, crushed (about 18)
 3 tbsp. sugar
 1 tsp. lemon rind
 6 tbsp. melted margarine
 Filling:
 4 (8 oz.) pkgs. cream cheese
 1 c. finely grated mild Cheddar
 1 3/4 c. sugar
 5 eggs
 1/2 c. whipping cream
 1/2 tsp. vanilla
 1 tsp. lemon rind

 Preparation :
    Mix together thoroughly.  Press onto sides and bottom of 8 inch
 springform pan. Set in refrigerator to chill while making the
 filling.  Soften cream cheese.  Add Cheddar.  Mix until Cheddar
 flakes are no longer visible.  (Anticipate about 20-30 minutes.)
 Add sugar gradually.  Add eggs one at a time.  Stir in whipping
 cream, vanilla and lemon rind.  Bake at 500 degrees for 12 minutes
 then lower heat to 250 degrees and bake for 2 hours.  The top should
 be golden.  Cool.
