Subject: Van de kamps cheese bread
Hello...I too have been searching for the receipe for the cheese bread that Van de Kamp used to have and
some years ago I was able to talk with a man who did work at the bakery and told him what I was searching
for and his suggestion was that he thought they used a "cheese tang" for the cheese bread. I personally
am not a baker so have not been able to find anyone who finds it as important to them that it is to me to
try using (and getting) cheese tang to try and make the bread.
Have you every heard of this and/or tried it?
Cheers,
Dying to get some cheese bread that reminds me of many moons ago of using it to make tomato and Mayo cheese
bread sandwiches which my mother would make for me on my way to junior college many many moons ago.
Hi Jennie,
I am familiar with “cheese tang.” I discovered it when researching a recipe for Schrafft’s cheese bread a couple
of months ago. I’m afraid that what I discovered is that it is no longer being made. However, there might be some
substitutes.
See my post about Schrafft’s cheese bread here: 9-25-2017

Cheese Powder
???? Maybe if you could use this it would work for a receipe for cheese bread????
Jennie
Hi Jennie,
I have no experience with any of these products or with making cheese bread at all, so I could not say.
If I myself were trying to make a cheese bread like Van de Kamp’s, I’d start with a known cheese bread
recipe like these from King Arthur Flour using Vermont Cheese Powder, and then I’d experiment, using more
cheese powder or different brands of cheese powder until I either got something I liked or gave up.
It might take multiple attempts.
Savory Cheddar Cheese Bread
Triple Cheese Breade
This company has some information about cheese bread and also sells a “cheese flavor enhancer” product: Prepared Pantry
Cheese Booster
It might be helpful to look at the old and adapted versions of the Schrafft’s recipe as well: Four Pounds Flour
I’m sorry if this isn’t much help to you, Jennie, but it’s the best that I can offer.

Subject: Unbaked fruitcake
I’m searching for a recipe for unbaked fruitcake that was in a women’s magazine in
the late 60’s or 70’s. It didn’t have marshmallows, it did have walnuts and candied
fruit. I’ve Googled a lot but can’t find it.
Thank you,
Debbie
Hi Debbie,
I wish that I could help you, but you just don't have enough details about this recipe.
Knowing that it came from a magazine isn't any help without knowing the name of the
magazine and in which issue it was published. "Unbaked fruitcake" is rather vague.
If the recipe had a unique name then that would help. Knowing that the ingredients
included walnuts and candied fruit and no marshmallows is a little help, but not enough.
If you know any more details about the recipe, send them to me.
The fruit cake recipes that I already have are here: Fruitcake Links
I'll post this for reader input.
