3/4 c. water2 tbsp. butter
1/4 c. brown sugar
Rest of cooked apricots (1/2 c.)
Preparation :
Cook 14-18 large dried apricot halves in water to cover until
tender. Drain and mash. Cream Crisco and sugar. Add egg and
flavorings. Add dry ingredients alternately with water. Blend in 2
tablespoons mashed apricots. Bake in 9 x 9 x 2 inch well greased
pan at 350 degrees for 35 minutes. Frost when cool. Cook: Cook 3
minutes and add 1/2 cup coconut. Frost cake and serve.

Phaedrus,
I was watching a cooking show hosted by Julia Child. She was
watching a woman make Danish pastries. The woman made her
own fillings. Two of these fillings included rasberries and
blackberries as well as apricots.
Could you possibly find out how to make an apricot marmalade?
My husband loves it. I usually buy Bonne Maman brand but dried
apricots are available and seeing as how this woman was able to
make the marmalade from the dried apricots I thought it would be
fun to try.

Apricot Marmalade
Ingredients :
1/2 lb. dried apricots (cut in small pieces); you can use an 11 oz. pkg.
1 orange
1 lemon
4 c. water
4 c. granulated sugar
Preparation :
Soak the apricots overnight in 3 cups of water. Slice thinly the
orange and lemon and soak overnight in 1 cup of water. Next morning
cook orange and lemon mixture for 10 minutes. Add sugar and
apricots. Cook over medium heat, stirring frequently (about 25 to
30 minutes) until right consistency. If desired, add 1/4 lb.
blanched, sliced almonds or maraschino cherries. Seal in jars while
hot.

Apricot Marmalade
Ingredients :
5 c. unpeeled apricots, cut in small pieces
3 c. sugar
Preparation :
Mix and set for 1 hour. Cook in 2 cups of water until tender
then add apricots and sugar. Add: 1 c. crushed pineapple Add 2 or
3 apricot pits for seasoning. Cook about 30 to 45 minutes. Remove
pits.

Ingredients :
1 lb. dried apricots
1 pt. water
2 c. sugar
Preparation :
Wash fruit, soak 8 hours. Place over fire in water in which it
has soaked; simmer until very soft; rub through coarse sieve, return
pulp to fire. When it reaches boiling point, add sugar and simmer
gently. It scorches very easily. To vary the marmalade, add 1/2
teaspoon ground cinnamon or 1 tablespoon chopped raisins or grated
orange peel to it while cooking. Chopped almonds may be added with
orange peel. Pour into sterilized jars and seal while hot.

25 minutes.

boiling point, add rest of ingredients. Let simmer gently for 40-45
minutes, stirring almost constantly. It scorches very easily. Pour
into sterilized jars and seal while hot.

Brown Sugar Pie
Ingredients :
8 inch unbaked pie shell
1 c. brown sugar, packed
3 tbsp. flour
12 oz. can evaporated milk
2 1/2 tbsp. butter
Dash of salt
Dash of cinnamon
Preparation :
Place sugar, flour and salt in pie shell. Mix together lightly
with fingertips. Pour milk carefully over the top. Do not stir.
Dot with butter and sprinkle with cinnamon. Bake at 350 degrees F.
oven 45 to 50 minutes or until the filling bubbles up in the center
of pie. Cool completely before serving. The top layer of milk on
the pie doesn't totally thicken after baking and that is the way it
is supposed to be. When the pie is cut the milk acts as a sauce.

Brown Sugar Pie
Ingredients :
3 tbsp. melted butter
1 1/2 c. dark brown sugar
1/2 c. white sugar
3 eggs, beaten
1 tsp. vanilla
1 tsp. vinegar
1/4 c. cream or milk
2 tbsp. all-purpose flour
1 (9-inch) pie shell, unbaked
Preparation :
Preheat oven to 350 degrees. Beat together eggs, sugar, butter.
Add vanilla, vinegar. Beat mix together milk/cream and flour.
Place pie shell on cookie sheet and pour mixture into it. Bake at
350 degrees for 45-50 minutes until puffed and golden.

Ingredients :
1 lb. dark brown sugar
1/2 stick butter or margarine (softened)
2 tbsp. flour
2 tbsp. milk
3 eggs
1 tbsp. brandy, bourbon or sherry or 1 tsp. vanilla
Preparation :
Cream butter (or margarine) and sugar. Add all other ingredients
and beat thoroughly. Place in unbaked pie shell and bake at 300
degrees until set, about one hour. Will make one 9 inch deep pie or
two shallow 9 inch pies.

Amish Brown Sugar Pie
Ingredients :
1 unbaked 8" pie shell, I use graham cracker crust
1 c. brown sugar
3 tbsp. flour
Speck of salt
1 can (12 oz.) evaporated milk
2 1/2 tsp. butter
Ground cinnamon
Preparation :
Preheat oven to 350 degrees. In the pie shell, place the brown
sugar, flour and salt. Mix with your fingers. Pour the evaporated
milk over the flour and sugar, but do not stir. Dot with butter and
drift cinnamon liberally over all. Bake for 50 minutes, or until the
filling just bubbles up in the middle. The filling will not
completely set, but that's the way it's supposed to be. Serve at
room temperature.

Cornmeal-Shortbread Cookies
Ingredients :
1 1/2 c. flour
3/4 c. white cornmeal
3/4 c. superfine sugar
1 c. butter
Preparation :
Preheat oven to 325 degrees F. In a large bowl, stir together
the flour, cornmeal and sugar. Using a pastry cutter or two knives,
cut the butter into the flour until the mixture resembles coarse
sand. Using your hands, sift the mixture through your fingers,
pressing the dough slightly so that each time you lift some of the
dough, it starts to form larger and larger clumps. When the clumps
start to hold together, turn onto a board and knead until the dough
holds together and cracks when pressed down. On a lightly floured
board, roll the dough 1/4 inch thick. Cut into 1 1/2 inch squares
and place 1/2 inch apart, on ungreased baking sheets . If desired,
press a design into each cookie using the dull edge of a cookie or
aspic cutter. Bake 12 minutes, or until the cookies are barely
colored around the edges. Cool on racks.
