Subject: Lost recipe
Phaedrus – It’s been quite a while since I’ve needed a recipe from you. Since then we’ve moved to a new town,
and then to a senior complex, my son-in-law passed away last year (still miss him so much, can’t imagine how
my daughter feels), and I got rid of cancer this year. We had to downsize for this last move but kept all my
recipe books. However, somehow I cannot find my recipe for Tropical Pie. It was in an old Better Homes and
Gardens 5-ring recipe book. When that one was getting pretty frayed I bought the Better Homes and Gardens
New Cookbook, dated 1981. I didn’t keep the cover for the old one and there is no date in it. I kept the
old recipes when I found that some of the recipes were not in the new one, including the Tropical Pie recipe,
which is listed in the Pastry and pies section under Meringue pies on page 303. That page is now missing
from my book and I’ve looked everywhere for it. I want to serve it to a couple neighbors this Friday, but
if you can’t find it my backup pie is peach. Peaches are in the grocery stores now and the Colorado ones
are juicy wonderful.

Here it is, from the 1960s BH&G Cookbook.
Phaed
Tropical Pie
1 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 cup unsweetened pineapple juice
1/2 cup orange juice
1 tablespoon lemon juice
5 slightly beaten egg yolks
1 tablespoon butter or margarine
1 teaspoon vanilla

2 stiff-beaten egg whites
1 baked 9-inch pastry shell
1 recipe Meringue
Oven 350°
In saucepan combine sugar, cornstarch, and salt. Blend in fruit juices.
Bring to a boil over medium heat, stirring constantly. Cook and stir
2 minutes. Remove from heat.
Stir small amount of hot mixture into egg yolks;return to hot mixture.
Bring to boiling and cook 1 minute, stirring constantly. Remove from heat.
Add butter and vanilla. Cool till just slightly warm.
Fold in the stiff-beaten egg whites. Pour into cooled pastry shell.
Spread meringue over filling, sealing to edges of pastry. Bake in moderate
oven (350°) 12 to 15 minutes or till meringue is golden brown. Cool pie
thoroughly.
Meringue: Beat 3 egg whites, 1/4 teaspoon cream of tartar,
and 1/2 teaspoon vanilla till soft peaks form. Gradually add 6 tablespoons
sugar, beating till stiff peaks form and all sugar is dissolved.

Sorry, no luck with a recipe for this. It’s sold at several local grocery stores
(Hy-Vee, Fareway, and Dahl's).
I’ll post it on the site for reader input.
