I am trying to figure out how Mema's Alaskan Tacos (Ybor City, FL) makes their tacos.
On paper, it seems simple enough- they are "puffy tacos", but with a twist.
The meat and such is cooked along with the shell in the frying pan. So, I can't figure
out how it is the meat gets cooked without the shell itself burning first.
But somehow, they put ground beef in the raw tortilla dough, and cook it all and it all
comes out done at one time. The beef inside comes out more like a patty than it does
crumbles like you would see in a regular taco.
Any insight you have would be appreciated!

Sorry, I had no success finding any information more than what you already know.
They keep their recipe and their method secret, and I imagine it will stay that
way until either an employee/former employee of Mema's spills the beans or until
one of the recipe cloning experts comes up with a copycat recipe.

Hello. I am Shelby Wilson and I am looking for:
A recipe for Hawaiian Chicken that was made at Dobbs House Luau Restaurant in
Memphis, TN. The place closed in the 70's but was also in some other major
cities. The Luau served Polynesian foods and I believe Hawaiian Chicken had ham
in it along with a sauce.
If you can not come up with a recipe I would be happy with a description from
the menu and I can take it from there.
I have looked for the recipe online at google and bing but the only thing I can
find is a copy of the menu where I can see the title "Hawaiian Chicken" but am
unable to read anything else.
Thank you so much for your time and I look forward to hearing from you. My high
school class voted this as their favorite food and I have been appointed to find
the recipe so we can have it at a reunion. They are betting I can't find it and
I and going to collect on that bet!!

Sorry, I did no better than you in locating a recipe or a description of the dish.
I suggest:
1) Post a request for the recipe or description on some of the message boards that
cover Tiki Bars such as this one. Several folks say they have menus. They might send
you the description:

2) I saw several offers of menus from Dobbs House Luau for sale. You might buy one to
get the description. E-Bay has had them in the past, but they don't seem to have one
at the moment. You might want to ask if the Hawaiian Chicken is on a particular menu
before you purchase it - that particular dish might not be on every menu from Dobbs

This is a chili sauce for hot dogs, made at a small ice cream shop in
Lafayette Indiana called Budge's. Its ground beef but thats all i know for sure.
simple american small town restaurant food. Its a little spicy but very flavorful.
any luck with that one, and if you find the recipe try it you'll absolutely love it.
