Hi there Phaedrus, for as long as I can remember I have always been in love
with one dish and one dish only at Humpty's restaurant and that is the Mexican
Pan Scrambler on the breakfast menu. It consists of crunchy hash browns, scrambled
eggs, diced tomatoes, canned jalapenos, Mexi sauce, kidney beans, ground beef,
and topped with an exquisite cheese sauce. I have tried to replicate this at
home and have come very close, but I never hit the nail on the head when it
comes to the spicy cheese sauce. This dish is currently on the menu at Humpty's
and has been for 15 years at least; also I believe it's a Canadian-only chain.
If you can find the recipe for the Mexican Pan Scrambler (hash browns, Mexi sauce,
cheese sauce - other ingredients are pretty straightforward) or just that delicious
cheese sauce, that would be so great! Thanks and good luck in your search!

Sorry, I had no success with any recipe for this from Los Angeles Unified School District.
There might be a similar recipe out there, but since I have no idea what it was like or
what was in it, then I wouldn't know a similar recipe when I saw it. You could try googling
"mustard butter" and then see if any of the recipes seem to be similar.
