I'm looking for a Sweet Potato Cake recipe that was in a 1975-1980 Southern Living cookbook
It was made with raw shredded sweet potato and had coconut cream filling.

The only sweet potato cake recipes that I can find from Southern Living are these:

The Southern Living website recipe archives do not appear to go back as far as 1975 – 1980.
There is another sweet potato cake recipe with coconut filling below.

Sweet Potato Cake
1 1/2 c. salad oil
2 c. sugar
4 eggs, separated
4 tbsp. hot water
2 1/2 c. sifted cake flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 1/2 c. grated raw sweet potato
1 c. chopped pecans
1 tsp. vanilla extract
Coconut filling
Combine oil and sugar in a large mixing bowl; beat until smooth.
Add egg yolks; beat well. Stir in hot water. Combine dry ingredients;
blend into sugar mixture. Stir in potato, pecans, and vanilla,
blending thoroughly. Beat egg whites until stiff; fold into batter.
Spoon mixture into three greased 8-inch cake pans. Bake at 350
degrees for 25 to 30 minutes. Remove from pans; cool on wire racks.
Spread Coconut Filling between layers and on top of cake.
Yield: one 8-inch layer cake.
--Coconut Filling:--
1 (13 oz.) can evaporated milk
1 c. sugar
1/2 c. butter or margarine
3 tbsp. all-purpose flour
1 tsp. vanilla extract
1 (3 1/2 oz.) can or 1 1/3 c. flaked
coconut
Combine milk, sugar, butter, flour and vanilla in a saucepan.
Cook, stirring constantly over medium heat until thickened,
about 12 minutes. Remove from heat; stir in coconut.
Beat until thickened and cooled. Yield: enough filling to
fill and top one 8-inch layer cake.

I come on to your site to look around and when I am searching
for recipes by ingredient, this time it’s Sweet Potatoes.
Now as I own the Southern Living 1980 Annual Recipes plus 1993 one too!
For some reason Aussie like to bring home cookbooks, I like to collect
them from second hand book shops.
In 1980 Annual there is a recipe that is very close to recipe posted in 7/24/15.
From Southern Living 1980 Annual Recipes -page 287
Sweet Potato Surprise Cake
1 cup salad oil
2 cups sugar
4 eggs, separated
1/4 cup hot water
2 1/2 cups sifted cake flour
1 tablespoon baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 1/2 cup grated uncooked sweet potato
1 cup chopped pecans or walnuts
1 tsp. vanilla extract
Creamy Coconut Frosting
Pecan halves
Combine oil, sugar,egg yolks, and water, beat at medium speed of electric mixer just until
combined.
Combine dry ingredients, and to oil mixture, mix just until moistened. Stir in potato,
pecans, and vanilla.
Beat egg whites until stiff but not dry; fold into batter.
Spoon mixture into three greased 9-inch cake pans. Bake at 350 F degrees
for 25 to 30 minutes or until cakes tests done.
Immediately invert layers wire cooling rack. Cooling 5 minutes and remove pans; cool completely.
Spread creamy coconut frosting between the layers and on the top and sides of cake. Garnish with
pecan halves. Yield one 9 inch layer cake.
Creamy Coconut Frosting
1 (13 oz.) can evaporated milk
1 cup sugar
1/2 cup butter or margarine
3 egg yolks
1 tsp. vanilla extract
1 1/2 cups flaked coconut
Combine milk, sugar, butter, egg yolks and vanilla in a heavy saucepan. Cook over medium heat,
stirring constantly, about 12 minutes or until thickened. (mixture will be consistency of pudding)
Remove from heat, stir in coconut. Cool completely. Yield frosting for one 9 inch layer cake

Subject: Recipe for Golden Corrals Sweet Potato Casserole
Hi, I'm searching for a recipe for a sweet potato casserole served
at the Golden Corral here in Florida. I'm looked on the web and
read some of them. But I know that there not exactly the same
because I was told my a restaurant employee that they add oats.
And I've not seen any recipe with that ingredient. I would very

Sorry, I had no success locating a Golden Corral sweet potato casserole recipe that made any mention at all of oats or oatmeal.
I did find Golden Corral sweet potato casserole recipes without oats, and there are other sweet potato casserole recipes with an oatmeal topping.
