Subject: cooking w/iron skillet
I have an old iron skillet and know there is a specific set of rules
for the seasoning and care of iron skillets.
Do you know what they are?
Thanks.
Hi Sal,
Sure enough:
To season an iron skillet be sure it is completely clean (no rust or crust built up over years of use). Coat completely with olive or vegetable oil both inside and out,
including the handle. Place the pan in a hot oven ( 350° F) and "bake" for about an hour. The oil should fill the pores of the iron. After you season the pan oil it with
each use and do not wash with soap. If your pan is seasoned right, food should not stick to it. Wash with warm water only and place on stove top on warm burner only til dry,
then oil again once dry. If you use soap on a seasoned iron pan you remove the oil and defeat the purpose of seasoning it.

Subject: Chocolate Walnut Coffee Ring
Back in the 70's and early 80's I used to buy a coffee ring at
Mayron's Bakery which have a number of store in and around Hartford,
CT. It probably was a sour cream dough but had a sinfully good
filling of chocolate paste and chopped walnuts and perhaps some
cinnamon. I've never been able to find a similar recipe.
Could you help? Thanks.
