A&P Rice Pudding
1 package (4-serving size) vanilla pudding and pie filling (not instant)
1 1/2 cups freshly cooked A&P rice
1/3 cup raisins
1/2 teaspoon ground nutmeg or cinnamon
Prepare the pudding according to package directions. Add the rice. Add the raisins and nutmeg.
Makes 6 servings.

Subject: Meltaway cake
Dear Uncle Phaedrus,
A bakery on West Grand Street in Mount Vernon, New York, called the
Cake Nook -- now closed -- used to make the best meltaway cake. It was
ring-shaped very tender danish-like cake with a light crumb topping
and it really did melt in your mouth. They made it in both cinnamon
and chocolate versions. Although other bakeries make meltaways, I've
been unable to find one that's like the Cake Nook's.
I hope you can locate the recipe.

Chocolate Meltaway Cake (Like New York bakeries.)
Crust:
1-1/2 cups cookie crumbs
1/4 - 1/2 cup melted margarine
Preheat oven to 350 degrees.
Mix crust ingredients together and press into bottoms and up sides of a
greased 10-inch tart pan with removable bottom. Bake for 8 - 10 minutes
until lightly browned.
For meltaway center:
1-1/4 cup chocolate chips
3/4 cup non-dairy creamer
Crumble topping:
2/3 cup flour
2/3 cup sugar
1/2 - 2/3 cup canola oil
Preheat oven to 350 degrees.
For meltaway center: In a small saucepan warm non-dairy creamer over low flame
until hot but not boiling. Add chocolate, turn off heat and stir until melted
and smooth. Remove from heat and let cool slightly. Pour 2/3 of chocolate into
crust.
For crumble topping: In a separate bowl, mix flour, sugar, and oil until crumbly
but leaving some large chunks. Sprinkle 1/3 over chocolate layer. Fold the second
1/3 into the reserved chocolate. Spoon over crumble layer. Sprinkle remaining 1/3
on top. Bake for 12 minutes. Chill until ready to serve. You may need a little more
crumble, if so use 1 cup flour, 1 cup sugar, and 3/4 - 1 cup oil for additional crumble.
Bake for approximately 25 minutes.

I noticed a reader wanted to know about a meltaway cake at the Cake Nook Bakery in
Mt Vernon New York. I have had it many many times, and although the bakery is now
closed you can find it at The Delite Bakery on Yonkers Ave, In Yonkers New York.
It is just as good. You have to either order it or ask for it they keep them hidden
under the counter. This bakery is about 1 mile from The now closes Cake Nook.I thought
maybe you could pass it on to your reader named Richie who inquired about it in 2014.

Sorry, still no luck with the Capri Bakery's actual recipe. I did find this

Dear Phaed,
Saw the request on your website where "Joseph" was looking for info about the cake which was
a Checkerboard style cake at the Capri Bakery.. Well, knowing how bakers around NJ try to simulate
good items from other bakeries OR hire the bakers when other bakeries close I did a bit of research
to find another bakery with the "Capri Cake". Well, I think I'm in luck and even called the bakery
that is in Hammonton, NJ that sells a Checkerboard Cake. One of the patrons on it's FACEBOOK website
wrote that it's "the Best Black and White Cake since Capri's in Newark, NJ." Bakery info is:
Sorrento Bakery, East Hanover, NJ. Joseph can either bring that up in FACEBOOK or google the phone
number and address. The lady at the bakery was very nice when I asked the information about the cake
and seemed to know of Capri's (they were busy, so I had to make it short).
