Luby's Cafeteria
In 1947, Bob Luby and his cousin Charles R. Johnston, opened the first Luby's Cafeteria
in San Antonio, Texas. It caught on, and by 1959 they had nine cafeterias In 1987, the
100th Luby's Cafeteria opened in Round Rock, Texas.
