The Cake Box Chocolate Chip Cookies 1 1/2 cups firmly packed brown sugar 1 1/2 cups white sugar 2 cups shortening (Crisco or butter) 2 teaspoons salt 1 1/2 teaspoons baking soda 5 5/8 cups unsifted cake flour or (6 3/8 cups sifted all purpose flour) 4 eggs 5 cups chocolate chips or (1 1/2 16 ounce packages) Preheat oven to 350°F. Mix together all ingredients except for chocolate chips. Mix until dough is uniform. Stir in chocolate chips. Form cookies with an ice cream scoop. Bake on an ungreased cookie sheet for 7 minutes or until lightly browned. *Makes 4 dozen cookies. ------------------------ The Cake Box Honey Oatmeal Bars 2 1/2 cups sugar 1 1/2 cups plus 1 tablespoon all-purpose shortening(Crisco) 1/4 teaspoon salt 1 tablespoon baking soda 3 cups oatmeal 3 1/2 cups unsifted bread flour(4 cups sifted flour) 1 1/4 cups ground raisins 1/3 cup honey 2 eggs 1/4 cup plus 2 tablespoons water 1 capful vanilla Preheat oven to 350°F. Mix together all ingredients, constantly scraping the bottom of the bowl, until dough is uniform. Form Cookies with an ice cream scoop. Bake on an ungreased cookie sheet for 7 minutes. Centers should still be soft when taken out of the oven. *Makes 4 dozen cookies.
