Surprisingly, "Gibby's" is a popular name for restaurants. I think you mean this one:

I found only a few brief mentions of this restaurant on the web - no details, no recipes, and not a single mention of their garlic salad dressing. Hurricane Wilma seriously damaged the restaurant in October, 2005, and they opted not to reopen.
We have a couple of dozen books about Florida restaurants' and their recipes, but there is no mention in any of them about Gibby's.
I will post this for reader input.
