I found the below recipe without much trouble.
Not much information was given about the recipe, so it may be a copycat rather than the actual restaurant recipe, but it's worth a try.

Cheddar's Onion Rings 2 large Onions 2 cups Buttermilk 4 cups Flour 2 tbs Garlic Salt 2 tbs Chili Powder Pepper Oil Cajun Dipping Sauce: 1/2 Cup Mayonnaise 1/2 Cup Sour Cream 1/4 Cup Chili Sauce 1 tsp Prepared Horseradish 1/4 tsp Ground Red Pepper Directions: Slice the onions very thin using a vegetable slicer. Soak in a bowl of buttermilk for 1 hour. Press the onions down so they soak completely covered. Heat the oil in a frying pan. In a small bowl mix flour, garlic, pepper and chili seasonings. After soaking the onions, put them in the flour mixture and coat them well, then quickly dip them back in the buttermilk and then back into the flour mixture again - doing a double dip. Gently put the coated onions in the pan of hot oil pan heated to 375 degrees F, cook until golden brown, about 2-4 minutes. Drain and let them rest on paper towels. Mix the Cajun sauce ingredients together in a bowl.
