Mandola's Italian and Carrabba's restaurants are linked by blood, founded by the same people, an uncle and his nephew. Both offer minestrone soup, but Carrabba's and one of Mandola's are not vegetarian. They are made with chicken stock and they contain prosciutto. Both restaurants may use the same recipe for this soup.
However, Mandola's also offers a vegetarian minestrone which is made with kale
and contains no chicken stock and no prosciutto. This soup is described on
Mandola's menu like this: Mandola's Menu
Vegetarian soup with zucchini, kale, beans, cabbage, potatoes, tomatoes,
green beans, carrots, celery and ditalini pasta.
There are copycat recipes on the web for the Carrabba's/Mandola's non-vegetarian minestrone, but I had no success locating a recipe for the vegetarian version. Sorry.
I will post this for reader input.
