This person talks about how much he misses Wahoo's beans, then, with no explanation, he posts a recipe. However
it doesn't have any sausage, so I don't know. You could try it, adding some sausage. Might be close, I don't know.
I also found an instant pot recipe for "Cajun White Beans". This one does have sausage, but it makes no claims

Checking the Wahoo's Fish Taco site at Wahoo's Fish Tacos, I find
that they do have a restaurant on the East Coast now, in New Jersey. I don't know how far it is from you but it
might be worth a drive to you. It's probably closer than California, or Colorado or Texas, for sure.
