Subject: Nick Tahou's Garbage Plate Sauce From: "Goosedude" Date: 5/14/2021, 12:27 PM To: phaedrus@hungrybrowser.com Here is a recipe you need to tackle…… The famous Nick Tahou’s Garbage Plate sauce…… I know you can buy the sauce jarred under the name STEVE T’s HOT SAUCE (named after Steve Tahou who split off the 2nd restaurant in Greece/Chili in Rochester…now deceased) But it isn’t cheap and I’d like a homemade version. I’ve dabbled in making my own and have come to the closest consistency using a slow cooker. Hope to see you tackle this one……
Hello Goosedude,
A "Garbage Plate", according to a 2010 archive of the Nick Tahou’s Hots Restaurant's official website, starts with a base of any combination of home fries, macaroni salad, baked beans, or French fries topped by your choice of meats and dressed to your liking with spicy mustard, chopped onions, and our signature Nick Tahou's hot sauce.
Steve Tahou is actually Nick Tahou's nephew. His version of the sauce is supposed to be based on Nick's sauce, but it would be premature to say that it is the same as Nick's sauce without some sort of evidence to back that up. I found several reviews of Steve T's sauce that said it was not quite the same stuff. There are a couple of places that you can buy Steve T's sauce:
"New York Style Deli" has it listed at $7.99 for 16 oz, but they appear to be out of stock. See: NY Style Deli
Amazon also has it but at a much higher price - $19.88 for 16 oz. See: Amazon.com
There are several copycat recipes and "tastes-like" recipes on the web for Nick Tahou's Hot Sauce. There are
also a couple of recipes that seem to be claiming to be the original. One of them is handwritten on note paper:
