Sorry, I could not locate a spinach salad dressing recipe from either restaurant.
It would help to know the location of the "Magnolia Hotel" to which you are referring. There are at least a dozen different ones in different cities and states, and I'm not familiar with any of them except the ones that are or were located in Jackson, MS and Biloxi, MS.
I will post this. Someone who is familiar with the spinach salad dressing from either place might be able to recommend a "tastes-like" recipe.

I reduced the recipe amounts for home use. Timm in Oregon Spinach Salad Dressing Ingredients: 1/2 cup olive oil or canola/olive oil mix 1/2 cup white granulated sugar 1/4 cup ketchup without high fructose corn syrup 1/4 cup red wine vinegar 2 tablespoons Worcestershire sauce Instructions: Whisk the olive oil, sugar, ketchup, red wine vinegar, and Worcestershire sauce together in a saucepan over medium heat until the sugar melts and dressing is creamy, about 4 to 5 minutes. Let the dressing cool to room temperature before using or refrigerating for later use. Note: High Fructose Corn Syrup is sweet but tastes nasty and manufacturers have to add other ingredients to mask its taste. It is always best to use ketchup made with real sugar.
