I have searched for this several times(including today), but I have never been able to find
a recipe for "Bill Knapp's Chicken and Biscuits".
I do have two recipes for Bill Knapp's biscuits on these pages:

The gravy came from the commissary but was essentially what you can get at a store in a jar.
For the Fricassee (chicken and biscuits is the same thing) all you do is add precooked diced
chicken to the gravy and heat.
It appears that he's saying that the "Biscuits and Gravy" was just the "Chicken Fricassee" served
over biscuits. I have not been able to find a recipe for "Bill Knapp's Chicken Fricassee", but he
says that it was just the gravy that was made at the Bill Knapp's Commissary with chopped, pre-cooked
chicken added to it. He also says that the gravy was very much like the chicken gravy that you can
buy in a jar at the supermarket.
So, you should be able to make something very much like Bill Knapp's Chicken and Biscuits by simply
doing this:
1)Using one of the linked recipes above, make the biscuits.
2)Take your own roasted chicken or a rotisserie chicken from the grocery, chop up the meat(I'd use breast meat.)
3)In a pan, mix the chopped chicken meat with a jar of chicken gravy. Heat and season to your liking.
4)Split and butter the biscuits while hot and spoon the hot chicken and gravy mixture over them.
