The recipe, from "Better Homes and Gardens 'Famous Foods from Famous Places'"(1964) is below.

Hamburger Steaks with Roquefort and Pancho Sauce from London Chop House

1 medium onion, chopped
3 tablespoons salad oil
2 cloves garlic, minced
2 pounds ground beef chuck
2 eggs
1 tablespoon chopped parsley
1/4 teaspoon pepper
    *    *    *
1/4 cup crumbled Roquefort cheese
2 tablespoons soft butter
2 tablespoons brandy

Saute onion in oil until transparent. Add garlic, cook
about 1 minute until garlic begins to be transparent.
Add to beef. Also add eggs, parsley, salt, and pepper;
mix well. Shape in 4 giant, oval hamburger balls.
For filling, blend remaining ingredients until creamy.
Make a deep hole in one side of each ball, fill with
cheese mixture and mold the meat over the opening;
repeat on the other side. Brush with oil; sprinkle
with salt and pepper. Broil close to heat until sealed
on both sides, finish broiling about 6 inches from heat,
turning once. For medium-done, cook about 15 minutes.
Served with Pancho Sauce. Makes 4 large servings.

Pancho Sauce

1 cop tomato catsup
1/2 cup mayonnaise
1/2 cup chili sauce
1 tablespoon dried mustard
1 teaspoon prepared horseradish
1/2 teaspoon ground ginger
1/4 teaspoon monosodium glutamate
2 tablespoons pineapple juice
1 tablespoon wine vinegar
2 teaspoons Worcestershire sauce
3 drops bottled hot pepper sauce

Combine ingredients thoroughly. Serve at room temperature
or heat to serve over Hamburger Steaks with Roquefort and
Pancho Sauce. Makes about 2 cups sauce.
