I hope you are having Happy Holidays as well!

I am sending you the Morrison's Devil's food cake recipe. As I said before, the only chocolate cake recipes that I have from Morrison's are the Devil's Food and the German Chocolate Cake. These are, of course, food service recipes, so they have to be modified for home use, which is not in my repertoire. The Devil's Food cake recipe makes 10 layers. That mysterious "quick blend," from reading about commercial baking, to be an emulsified type of shortening which allows cakes and icings to incorporated more air and water. Wesson makes a "Super Quick Blend." "MFB" is also shortening. MFB stands for “made for baking”. It is a silicone free, solid shortening created specifically for retail and grocery doughnut shops. I have no idea whether you can buy these in small quantities for home use. If you try to use the recipe, I'd just use your regular shortening for both.

The cake recipe doesn't say what kind of icing to use.  I'm sending you Morrison's Fudge icing recipe, but your own chocolate buttercream might work just as well.

Morrison's Devil's Food Layer Cake
       
Ingredients                            Amount                   Method
       
Quick Blend                         1 lb    4 ozs            Mix for 7 minutes at second speed
Cake Flour                            2 lbs  8 ozs   
Sugar                                    3 lbs  10 ozs       
Cocoa Powder( dutched)    11 ozs
Milk Powder (whole)            4  ozs
Baking Powder                    1 - 3/4 oz
Soda                                     1/2 oz
Salt                                       1    oz
Whole Eggs                         2   lbs
Vanilla                                  1/2 oz
Water                                    10 ozs
       
Water                                    2 lbs  2 ozs               Add slowly, 2 lbs 3 ozs of water.
                                                                                Mix for 3 minutes at low speed.
                                                                               
Grease pans with mixture of a ratio of 1 lb of MFB to 8 ozs bread flour.

Scale 1 - 1/4 lbs to each layer.
       
Baking Temperature:        360° - 375°
       
        Yield:        10 layers

Fudge Icing

Ingredients                            Amount                   Method
       
Brown Sugar                        1 lb 8 ozs                Place  brown sugar, Pet milk,            
                                                                               syrup or honey, and vanilla in
                                                                               kettle and heat until luke warm.
                                                                               Stir constantly to avoid burning,
Syrup or Honey                    8 ozs
Vanilla Flavoring                    as desired       
Powdered Sugar                    4 lbs                       Place warm mix in mixing bowl
                                                                                and add powdered sugar, cocoa
                                                                                and shortening.
                                                                               
Shortening MFB                    12 ozs                     Mix until smooth.
       
       
Allow icing to become firm before slicing cake.
