I've had a request before for meltaway cake recipes from New York bakeries. Sadly,  I had no success, and I had the same result today. I cannot find anything from the two bakeries that you mention.

Searching for just "meltaway cake" and not limiting it to any particular bakery's recipe, I did find a recipe for "chocolate meltaway cake" that says "like the one from the NY bakeries." See here: 08-10-2020

Also, I found it said in several places that "chocolate meltaway cake" is just another name for "chocolate babka" like Jewish bakeries sell. This recipe appears to take that idea and go with it:Easy Babka

Holly, I wouldn't expect to find the exact recipes from those bakeries on the internet. Bakeries just just don't post their recipes. The best you might hope to find is a "copycat" recipe, and there doesn't appear to be one available for this cake.

I'll post this for reader input.

Thanks for your help with this. I am really searching for the cinnamon one. 
It is available near Jewish areas in NY and always delish and popular. 
I’ll just Keep on in my search. No bakeries don’t like to share.
