There is a lot of discussion about this on Reddit. What I am getting from reading about this is that it was marketed as a "fondue" rather than as a soup. See: Hickory Farms Leek Soup
The type of cheese that was used with the dry soup mix was "chutter", which at the time was sold only through Hickory Farms. Now, however, the Herkimer company, who makes "Chutter," markets it directly. They have a website, and the below recipe is posted there. See: Herkimer Cheese
I am also attaching a scan of the fondue recipe from the chutter package. As you can see, it appears to be just chutter, leek soup mix, and water. Knorr makes a dry leek soup mix which you can get at the supermarket. Amazon has it as well. See:
