Checking my sources, including two Morrison's kitchen manuals and a friend who used to be a Morrison's Cafeteria manager, I cannot find any mention of this dish ever being served at Morrison's.

If you had this dish at a Morrison's Cafeteria, it likely was a manager's special. If so, only the manager of that particular Morrison's and the kitchen staff at that time would know anything about the recipe or source of their dish. There are plenty of recipes for plum pudding and hard sauce on the web, just not Morrison's.
