A recipe for a White Fruit Cake caught my eye because of the "Radiant" Mix. It may have been me asking about it in 2003...can't remember, but my name is Janet as well! The recipe is as follows for a White Fruit Cake 1 1/2 blocks butter 1 1/2 c granulated sugar 5 med. Eggs 1 c. orange juice 3 c all purpose. flour 1/2 tsp salt 2 tsp baking powder 1 tsp vanilla 1 pkg Radiant Mix 1 c chopped walnuts or Pecans Cream butter & sugar. Add beaten eggs & orange juice. Sift dry ingredients & add a little at a time to first mixture until half is used. Add Vanilla. Mix other half of flour mixture with fruit & nuts, & mix all together well. Pour into 2 loaf pans lined with several layers of waxed paper. Bake in 300 degree oven for 2 hours. This recipe was from Mrs Paul Sackett, One of the Women of Holy Apostles Episcopal Church, in Hilo, Hawaii 1959. I grew up there but left when I was about 15. I still have and use that cook book. I am about to embark on a Yule Log recipe of my mother's that I've always liked. And I think the Radiant mix was just as you thought it was. Dried fruit for fruitcake. I am Janet Fanto and I live on the Eastern Shore of Maryland very quietly in the country. Happy Holidays! Janet
Hi Janet,
I can't tell if you were the "Janet" that wrote in 2003. I no longer have the original emails from then.
Thanks for sending this recipe! I'll post it.
These are my Radiant Mix posts. One has an ingredient list and another gives substitutions for the product:
Stay well, and Happy Holidays!
