If you want a tartar sauce that tastes like one you have had before, you must tell me the brand or the restaurant where you had it. There are dozens of tartar sauce recipes. Everyone makes it a little differently.
There are two fairly simple recipes below. If you do not like sour tartar sauce, use sweet pickles instead of dill pickles or cornichons. Use Hellman's mayonnaise.

Award winning Tartar Sauce 1/2 Cup Mayo 1/2 Cup Sour Cream 3 Tbs Lemon Juice 2 Tbs of Dill Relish, with the excess liquid pressed out, or 2Tbs of diced dill pickles 1-2 Tbs of small capers, to taste diced onion (optional) to taste ------------------------------------------ Classic Tartar Sauce Ingredients 1 clove garlic 1 teaspoon kosher salt 1 shallot, roughly chopped 2 tablespoons capers 2 tablespoons roughly chopped cornichons with their juice ½ cup plus 2 tablespoons mayonnaise ½ cup sour cream Juice of ½ lemon 1 tablespoon chopped parsley Salt and pepper to taste Preparation In a food processor, purée the garlic and salt. Add shallot, capers, cornichons and their juices and pulse a few times. Add the mayonnaise, sour cream, lemon juice and parsley, and pulse. Season with salt and pepper.
