Smiling Susan ----------------------------------------------- The first recipe below my father brought back from New Zealand in the early 1980's The second (rather unusual) recipe came back with a friend about 5 years ago. Timm in Oregon Ambrosia Kiwi Style Ingredients: 1 kg yoghurt, your favorite flavor (roughly 28 to 30 ounces) 500 ml whipping cream (a little over 2 cups) 1 packet marshmallows 1 punnet strawberries Instructions: Slice strawberries and cut marshmallows in half. Whip the cream until you get soft peaks and then gently add the yoghurt and mix until its well combined. Add the marshmallows and fruit; then spoon into either a large glass bowl or individual serving bowls or glasses. Refrigerate to set for a minimum of 4 to 5 hours or preferably overnight. Ready to serve when the marshmallow become soft. Note: A punnet is a small container or basket for strawberries or other fruits in New Zealand ------------------------------------------------------------------- Ambrosia Fruit Salad Ingredients: 100gms orange, peeled 100gms banana, peeled 100gms apple, peeled and cored 100gms strawberries 100gms grapes 1/2 cup cream, whipped to soft peaks 1/2 cup yoghurt, any flavor 1 package chocolate chips 1 package marshmallows 1 package flakes, reserve 1 for decoration 1 package pineapple lumps 1 package M&Ms Instructions: Cut all fruit including the strawberries and grapes into pieces. Place in large bowl. Mix the yoghurt and cream in with the fruit, stirring the mixture until all the fruit is coated. Add the chocolate chips and lollies to the fruit and yoghurt mixture, saving a flake for the top. Once all mixed in, sprinkle flake over the top of mixture, then place in the refrigerator for 45 minutes to set.
