Hi Tonya,
First I checked my copy of the Morrison's kitchen manual. No dish with that name in it. Then I searched the Internet. I could not find any mention of it.
Finally, I wrote to an acquaintance of mine who was a Morrison's manager in their last years and who has a copy of the kitchen manual from before they were sold to Piccadilly. This is what he said:
"Where did this person work? It sounds like a local Texas dish. It is not in my manual. I have never heard of it."
Tonya, local Morrison's managers were allowed to add to the menu a dish or two that had local appeal, and that's what your Mexican Corn Casserole may be. It particularly makes sense if the Morrison's at which you worked was located in Texas. That's why the recipe is not in either his copy or my copy of the manual. Only kitchen personnel at that particular Morrison's would have any idea of that recipe.

I actually worked at the one here in chattanooga tn at Hamilton Place. Thank you for the information. I will definitely continue to try to duplicate it. Since I now have the M1 sauce recipe I may incorporate it. Thank you again.
